Easiest Coconut Milk Recipe –...

1. This is the new step: Grind the coconut in your blender or spice grinder until fairly finely ground
- 1 cup dried unsweetened shredded coconut
- water to make 5 cups of coconut milk
- Sweetener (optional. If using, add a dash of salt as well.)

Oatmeal Breakfast Bars: Preheat the oven to 375 F and lightly grease an 8-in square baking pan
- 2/3 cup milk of choice (160g)
- 1 tsp pure vanilla extract (2g)
- 3 tbsp ground flaxmeal (or ground chia) (18g)
- 3 1/2 tbsp coconut or vegetable oil (35g) (You can omit if desired without altering the texture. it just won’t be as rich and buttery.)
- 1/16 tsp uncut stevia, or 2 tbsp sugar of choice (this goes in with wet ingredients
- 2 1/2 cups peeled and chopped apple slices (about 2 large apples)
- 1 cup rolled oats (85g)
- 3-6 tbsp brown sugar or or coconut sugar or xylitol, depending on desired sweetness (3 is slightly sweet) (this goes in with dry ingredients) (30-60g)
- 1/2 cup raisins, optional
- 1 tsp cinnamon or apple pie spice
- 1/2 tsp salt
- 1/2 cup more milk of choice (120g)
Coconut Cream Eggs Recipe

In a bowl, beat cream cheese and butter until smooth
- 1 package (8 ounces) cream cheese, softened
- 1 tablespoon butter, softened
- 4 cups confectioners' sugar
- 1 cup flaked coconut
- 2 cups (12 ounces) semisweet chocolate chips
- 1 tablespoon shortening

In a large bowl, cream butter and sugar until light and fluffy
- 1/2 cup butter, softened
- 1 cup Imperial Sugar® / Dixie Crystals® Granulated Sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 3/4 cup dried cranberries
- 3/4 cup vanilla or white chips
Almond Pound Cake 1 & 3

1. Preheat oven to 350ºF 2
- 3 cups Almond Flour
- 1/4 cup Nutiva Organic Coconut Flour
- 3/4 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Sea Salt
- 2/3 cup Nutiva Organic Coconut Sugar ( I used Xylitol)
- 1/2 cup Nutiva Organic Extra Virgin Coconut Oil
- 4 Eggs (large)
- 1/2 cup Almond Milk
- 1/2 tsp Almond Extract
- 1 tsp Vanilla Extract
- Instructions
- 1 . Preheat oven to 350ºF
- 2 . Spread a light coating of coconut oil on pound cake pan
- 3 . Combine almond flour, coconut flour, baking soda, baking powder, and sea salt in a large bowl.
- 4 . Blend together melted coconut oil, coconut sugar, eggs, almond milk, almond extract, and vanilla extract in a blender or food processor.
- 5 . Pour wet ingredients into the dry ingredients and stir until smooth, then pour into baking dish.
- 6 . Bake for 35-45 minutes, until a cake tester inserted in the middle of the cake comes out clean.
- 7 . Allow cake to cool for 10 minutes before cutting. Enjoy!
- Yield: 8-12 Pieces (8-12 Servings)

Rub the Pulled Pork Dry Rub: Mix all the dry rub ingredients and rub it all over the pork shoulder picnic pieces
- PULLED PORK DRY RUB:
- 4 pounds pork shoulder picnic (Cut into 4 – 8 pieces)

- 2 tablespoons brown sugar
- 2 teaspoons chili powder
- 2 teaspoons black pepper

- 1 teaspoon garlic powder

- 1 teaspoon kosher salt
- 1/2 teaspoon cumin seed, ground
- 1/2 teaspoon fennel seed, ground

- 1 medium onion, minced
- BBQ SAUCE FOR PULLED PORK
- 1 medium onion, minced
- 3 garlic cloves, minced
- 1 cup ketchup
- 1/2 cup water
- 1/8 cup maple syrup
- 1/8 cup honey
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard

In a blender, combine the coconut milk, xylitol, peppermint, vanilla, and salt
- 1 1 1 can unsweetened coconut milk
- 1/2 1/2 1/2 cup birch xylitol
- 1 1/2 1 1/2 1/2 tsp. peppermint extract
- 1 1 1 tsp. corn-free vanilla extract (such as Frontier brand)
- Pinch Pinch of sea salt
- 1/4 1/4 1/4 cup coconut butter, melted
- 2 2 2 ripe avocados
- 1/4 1/4 1/4 cup unsweetened raw cacao nibs (such as Navitas Naturals)
