In a stand mixer blend the cream cheese and coconut oil until smooth
- 4 ounces cream cheese, light, softened
- 2 tablespoons coconut oil, melted
- 2 tablespoons coconut "cream"
- pinch salt
- juice of 1/2-1 lemon
- 1-2 droppers full lemon liquid stevia
- 2 tablespoons shredded unsweetened coconut
- Zest of 1 lemon
- 1/4 cup unsweetened shredded coconut
- Outer coating
- Zest of 1 lemon
- 1/4 cup unsweetened shredded coconut

Directions Preheat the oven to 375 degrees F (190 degrees C)
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup white sugar
- 1 cup light brown sugar

- 8 slices thick-cut bacon, cooked and coarsely chopped

- Cauliflower crust “bread” slices
- 1 small head cauliflower, cut into small florets (should yield 3 cups of cauliflower rice)
