Shrimp Mousse

Combine tomato soup and cream cheese
- 1 can tomato soup
- 6 oz cream cheese
- 2 T gelatin dissolved in 1/2 cup cold water
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 cup mayonnaise
- 3/4 lb very small shrimp
- 1/2 cup whipped cream
Banoffee Pie

Preheat oven to 350 degrees F
- 1 1/2 cups graham cracker crumbs
- 10 tablespoons butter, softened
- 2 (14-ounce) cans sweetened condensed milk
- 3 large bananas
- 1 1/2 cups heavy whipping cream
- 1/3 cup confectioners' sugar
- 1 teaspoon vanilla extract
Cream of Mushroom Soup

In a small saucepan over medium-high heat, warm 2 cups of the stock
- 6 cups chicken stock
- 2 oz. dried porcini mushrooms
- 4 Tbs. (1/2 stick) unsalted butter
- 3 Tbs. minced shallot
- 1 1/2 lb. white button mushrooms, brushed clean
- and coarsely chopped
- 1/4 cup Madeira wine (optional)
- 2 Tbs. all-purpose flour
- 1/2 cup heavy cream, plus 1/4 cup for drizzling
- (optional)
- Salt and freshly ground pepper, to taste
- Deep-fried sage leaves for garnish (optional)
Veal Marsala

Dredge veal in flour. Heat oil in skillet and saute quickly until browned
- 12 large slices veal, pounded thin

- 2 T chopped chives or 4 green onions

Crispy Cauliflower Cakes with Herb Sauce and Arugula Salad

- 12 ounces cauliflower florets
- 1 (10-ounce) peeled baking potato, cut into 4 wedges
- 2 large shallots, halved lengthwise
- 1 1/2 tablespoons extra-virgin olive oil
- 2 ounces fontina cheese, shredded (about 1/2 cup)
- 1/2 teaspoon chopped fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg, lightly beaten
- 1/2 cup panko (Japanese breadcrumbs), lightly toasted
- 2 tablespoons grated Parmigiano-Reggiano cheese
- 2 tablespoons light sour cream
- 2 tablespoons canola mayonnaise (such as Hellmann's)
- 2 teaspoons chopped fresh flat-leaf parsley
- 2 teaspoons minced fresh chives
- 1/4 teaspoon black pepper
- 1 garlic clove, minced
- 4 cups baby arugula
- 1/2 cup halved grape tomatoes
- 2 teaspoons extra-virgin olive oil
- 1 teaspoon fresh lemon juice
No-Knead Burger Buns

1) Combine all of the ingredients, and beat at high speed, using an electric mixer, for 2 minutes
- 2 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup Vermont cheese powder or 1/2 cup finely grated sharp cheddar or Parmesan cheese
- 3/4 teaspoon salt*
- 1 teaspoon onion powder, optional but tasty
- 1 tablespoon sugar
- 2 1/2 teaspoons instant yeast
- 4 tablespoons softened butter
- 1 large egg
- 2/3 to 3/4 cup lukewarm water**
- Use 1 teaspoon salt if you use freshly grated cheese
- Use the greater amount of liquid in winter or in drier climates; the lesser amount in summer, or in a humid environment.
- Topping: 2 tablespoons melted butter
Leek and Garlic Soup

- 1 whole garlic head
- 6 parsley sprigs
- 4 thyme sprigs
- 2 (4-inch) green leek leaves
- 1 bay leaf
- 1 tablespoon olive oil
- 3 cups thinly sliced leek (about 3 large)
- 2 cups (1-inch) cubed crusty bread (about 2 ounces)
- 1 tablespoon chopped fresh garlic
- 4 cups organic vegetable broth (such as Swanson Certified Organic)
- 1/4 teaspoon coarsely ground black pepper
- 1/4 cup finely chopped fresh chives
Pepper Steak

Cut beef across grain and marinate in soy sauce, garlic and ginger
- 1 lb round steak
- 1/4 cup soy sauce
- 1 clove garlic, minced
- 1/2 t ground ginger
- 1/4 cup oil
- 2 tomatoes, cut in wedges

- 1 cup pepper slices
- 2 sliced celery stalks
- 1 T cornstarch
- 1 cup water
