Ingredients

  • 12 large slices veal, pounded thin
  • flour
  • oil
  • 2-3 T butter
  • 1/2 lb sliced fresh mushrooms
  • 2 T chopped chives or 4 green onions
  • 2 T chopped parsley
  • 1 1/2 cups beef broth
  • 1/2 cup marsala wine
  • paprika
  • salt
  • pepper

Preparation

Step 1

Dredge veal in flour. Heat oil in skillet and saute quickly until browned. Transfer to baking dish. Sprinkle with paprika. Add more oil as necessary.Melt butter in skillet. Add mushrooms and saute 5 minutes. Add green onions, parsley, salt and pepper, broth and wine. Simmer 5 minutes. Pour over veal slices. Bake at 350 for 1/2 hour. Serve with hot buttered noodles.
