Mini Crab Cakes

Using an electric mixer, beat cream cheese in a medium bowl until smooth
- 8 oz cream cheese, room temp
- 1 cup shredded Parmesan cheese, divided
- 1 large egg
- 1/4 cup sour cream
- 1 teaspoon orange zest
- 1/2 teaspoon lemon zest
- 4 teaspoons plus 4 Tablespoons chopped fresh chives, divided
- 1/4 teaspoon coarse kosher salt
- large pinch cayenne pepper
- 6 oz fresh lump crab meat, picked over, patted dry, coarsely shredded
- 1-1/2 cups panko (Japanese breadcrumbs)
- 1/2 cup butter, melted
- fresh chives, cut into pieces
Peach Daiquiri

Osso Buco with Tomatoes, Olives and Gremolata

Preheat oven to 325°F. Pat shanks dry and season with salt and pepper
- For stew
- 8 to 10 (10-oz) meaty cross-cut veal shanks (osso buco; 5 to 6 1/2 lb total), each tied with kitchen string
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 medium onions, halved lengthwise and thinly sliced
- 1 small carrot, finely chopped
- 1 celery rib, finely chopped
- 2 garlic cloves, finely chopped
- 1 cup dry white wine
- 1 cup chicken broth
- 1 (28- to 32-oz) can whole plum tomatoes with juice (not in purée), coarsely chopped
- 1 cup Kalamata or other brine-cured black olives, pitted and halved

- 1/8 teaspoon ground red pepper
- 1 pound baking potato, peeled and cut into 1/8-inch-thick slices

Paella Salad

Peel and devein shrimp. Cook in boiling, salted water for 1-3 minutes or until shrimp turn pink
- 12 oz fresh or frozen shrimp
- 1/2 t salt
- 1 six oz pkg long grain and wild rice mix
- 1 cup frozen peas, thawed and drained
- 4 oz fully cooked smoked sausage, sliced into bite-sized pieces
- 1 2 oz jar sliced pimiento, drained
- 1 envelope garlic and herbe dry salad dressing mix
- 1 6 oz can crabmeat, drained
- Lettuce leaves (optional)
- Tomato slices (optional)
Ultimate Breakfast Strata

Preheat oven to 400 degrees F (200 degrees C)
- 4 red potatoes, diced
- salt and ground black pepper to taste
- 16 eggs
- 1 cup sour cream
- 2 pounds breakfast sausage
- 1 (16 ounce) package bacon
- 3 red bell peppers, chopped
- 1 small onion, chopped
- 4 cups shredded Cheddar cheese
Queen of Puddings

- PUDDING
- 8 fl oz full cream milk
- 8 fl oz heavy cream
- 1/2 tsp vanilla extract
- 3 1/2 oz superfine sugar
- 5 large egg yolks
- 5 oz fresh breadcrumbs
- Zest of 2 lemons
- 7 oz of either jam, fruit preserve, or fruit compote
- MERINGUE
- 5 egg whites
- 4 oz superfine sugar
- 1 tbsp powder/icing sugar

- 1 can sliced mushrooms, drained
- 1 pkg frozen peas, thawed
- 1 can condensed beef broth
- 1/2 cup red wine
- 2 t brown sugar
- 2 t Kitchen Bouquet
- 1 can tomato wedges, drained (14 oz)
- 1/4 cup flour
- 1/4 cup water
