Cilantro Lime Vinaigrette

- Zest of 1 lime
- 1/4 cup fresh squeezed lime juice
- 2 tablespoons honey
- 2 tablespoons roughly chopped fresh cilantro (leaves & stems)
- 1 tablespoon roughly chopped fresh mint leaves
- 1 teaspoon Dijon mustard
- 1/2 teaspoon minced garlic
- 1 small scallion (white & light green parts) thinly sliced
- 1/4 to 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup olive or canola oil

- 1 package Taco Bell seasoning mix
- 2 1/2 cups mashed potato flakes (you could also use left over mashed potatoes and omit the butter and milk)
