Lime Garlic Chicken

1. Combine all ingredients into a gallon sized freezer bag
- 1 1/2 lbs skinless chicken thighs
- 4 Tbsp fresh lime juice
- 1 1/2 cups chicken broth
- 2 garlic cloves, finely chopped
- 1/2 tsp thyme
- 2 Tbsp unsalted butter
- pepper, to taste
Marinated Vegetables with Poppy Seed Dressing

- Dressing:
- 1/4 cup lemon juice
- 1/3 cup vinegar either cider or clear
- 1 1/2 tsp dry mustard
- 2 tbs poppy seeds
- 1 tsp salt or to taste
- 1 cup sugar
- 1/4 cup diced onion or more to taste
- 1 1/4 to 1 1/2 cups Canola oil
- Salad:
- 2 cups each diced celery and zucchini
- 3-4 cups diced tomatoes
- Lettuce, chopped for salad

Buttermilk Cheddar Biscuits

- 1 1/2 teaspoons kosher salt

- 1 cold extra-large egg
- 1 cup grated extra-sharp Cheddar
- 1 egg, beaten with 1 tablespoon water or milk

- 1 can condensed cream of chicken (or mushroom) soup, undiluted.
- 1 pkg dry onion soup mix
- 6 boneless skinless chicken breasts
- 1/2 cup imitation bacon bits or 1/2 lb bacon, crisp and crumbled.
- 1 container (16oz) sour cream
Butternut Squash and Sage Pizza

1. Preheat oven to 400 degrees
- 1 tbs butter
- 2 tbs olive oil
- 2 shallots, finely chopped
- 1 butternut squash, peeled, seeded and cubed
- 16 sage leaves
- 1 batch prepared pizza dough
- 1 1/2 cups thick homemade or bottled tomato sauce
- 4 oz mozzarella cheese, sliced
- 4 oz firm goat cheese
- Salt and Pepper
Corn and Bean Salsa Dip

- 2 cans corn, drained
- 2 cans black beans, drained
- Juice of 2 limes
- 1 White onion
- 1-2 cloves Garlic
- 1 tbs Cumin
- 3-4 tbs chopped Cilantro
Chicken with Wild Mushrooms

- 2 (3 1/2- to 4-pound) chickens, cut in eighths
- Kosher salt and freshly ground black pepper
- All-purpose flour
- 1/2 cup good olive oil
- 8 whole garlic cloves
- 1 1/2 pounds assorted wild mushrooms, such as porcini and cremini, stems removed and (1 1/2-inch) diced
- 8 sprigs fresh thyme, tied with kitchen string
- 1/4 cup dry sherry
- 1 tablespoon minced garlic (3 cloves)
- 2 cups white wine, such as Pinot Grigio
- 2 cups good chicken stock, preferably homemade
- 3 tablespoons unsalted butter, at room temperature
Broccoli Salad

- 4 cups broccoli florets, finely chopped, no stems, blanched
- 1/2 to 1 cup yellow and or dark raisins
- 1/2 cup finely chopped green or red onions
- 1 cup chopped celery
- 1/2 cup dry roasted sunflower seeds
- 8 slices of bacon, cooked crisp or one can of Real bacon bits or Bacos
- 2 tbs red wine vinegar
- 2 tbs sugar
- 1 cup mayonnaise
