Avocado Chicken Salad

1. Cook chicken till done
- 2-3 boneless chicken breasts
- 1 avocado
- 1/4 chopped onion
- juice of 1/2 lime
- 2 tbs chopped cilantro
- Salt and pepper to taste
Tzatziki Sauce

- 2 cucumbers, peeled, seeded and cubed
- 2 tsp salt
- 1 1/2 cups plain yogurt
- 4 tbs water
- 1 clove garlic, minced
- 2 tbs white wine vinegar
- 2 tbs extra virgin olive oil
Crab Salsa

- 1 lb crab or shrimp meat
- 1 large chopped white onion
- 1 bunch chopped Cilantro
- 4 chopped Roma tomatoes
- 1-2 (depending on size) chopped cucumber
- lime juice to taste

1.Bring 5 quarts of water, 3 tablespoons salt, and the lemon to a boil in a large saucepan
- 3 tablespoons plus 1 teaspoon kosher salt
- 1 lemon cut into quarters
- 4 pounds large shrimp in the shell (16 to 20 shrimp per pound)
- 2 cups good mayonnaise
- 1 teaspoon Dijon mustard

- 3 Roma Tomatoes, sliced
- 8 OZ Fresh Mozzarella, sliced
- Dash of Salt
- Dash of Black pepper
- Dash of Parmesan cheese, shredded
- Dash of Italian seasoning
Braised Chicken Thighs with Olives and Potatoes

1. Season the chicken with 1/2 teaspoon salt and a few grinds of pepper
- 8 6 -ounce skin-on, bone-in chicken thighs
- Kosher salt and freshly ground pepper
- 2 tablespoons extra-virgin olive oil

- 1/2 large white onion, sliced
