Apple Cider Sangria

1. Put the cinnamon, nutmeg, and brown sugar in a pitcher
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons brown sugar
- 3 cups apple cider
- 3 cups apple juice
- 1 1/2 cups red wine or more, if you'd like
- 4 ounces brandy plus one more cup, if you'd like
- 2 apples
Basil Pesto Pomodoro Sauce

Spray large skillet with cooking spray
- PAM Olive Oil No-Stick Cooking Spray
- 1 cup chopped white onion
- 2 cans (14.5 oz. each) Hunts Diced Tomatoes, undrained
- 1/4 cup prepared basil pesto
- Optional - Hot cooked pasta, chicken or fish
Pasta with Goat Cheese

Cook pasta adding peas the last 2 minutes of cooking
- 13.25 oz. box medium whole grain pasta shells
- 1 pound frozen petite green peas, thawed
- 6 oz. softened goat cheese
- 1/2 cup chopped walnuts
- 2 cloves minced garlic
- 1 tablespoon extra-virgin olive oil
- 1/8 teaspoon EACH- salt and fresh ground pepper
Butter Garlic Herb Steak Foil Packets

In a medium size bowl, add the red potatoes, carrots, bell peppers, and red onion
- Garlic Herb Butter:
- 1 pound (OR LESS) small red potatoes, cut in fourths
- 2 carrots, sliced
- 1 red bell pepper, cubed
- 1 green red pepper, cubed
- 1/2 red onion, cut into cubes
- Salt and pepper
- 1 tablespoon olive oil
- 1 1/2 pound top sirloin steak, cut in two inch cubes
- 1/2 cup butter, room temperature
- 1/4 cup freshly chopped parsley
- 4 garlic cloves, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

Red Lentil and Vegetable Soup

In a large pot, heat olive oil on medium
- 1 tablespoon olive oil
- 4 carrots, chopped
- 1 small onion, chopped
- 1 teaspoon cumin
- 14.5 oz. can undrained, no-salt-added diced tomatoes, undrained
- 1 cup red lentils, rinsed
- 14.5 oz. can vegetable broth
- 2 cups water
- 1/4 teaspoon coarse salt
- 1/8 teaspoon pepper
- 5 oz. packagge baby spinach

- 2 sticks of butter
- 1 cup sugar
- 2 egg yolks
- 2 cups flour
- 1 can Solo Fruit Filling (Almond, etc.)

Tomato and Gouda Grilled Cheese Sandwich

In a large saute pan over medium-high heat, add the oil and swirl to coat
- 1 medium vine-ripened tomato, cut into 1/4" thick slices
- 3 ounces Gouda cheese
- 1 tablespoon extra virgin Olive Oil, plus more for brushing the bread
- Salt and freshly ground black pepper
- 4 slices whole wheat bread
Glazed Carrots with Cranberries

- 2 lb. baby cut carrots
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1/3 cup craisins
- 1/3 teaspoon EACH ground ginger and rosemary

Chicken and Noodle Casserole

- 1 can cream of mushroom soup
- 1/2 cup milk
- 1/4 teaspoon ground black pepper
- 1/4 cup grated parmesan cheese
- 1 cup frozen mixed vegetables
- 2 cups cubed chicken
- 2 cups medium egg noodles, cooked and drained
- 1/2 cup shredded cheddar cheese
