Grilled Mahi Mahi Fillets in Soy Ginger Marinade

This is a mild, Asian-inspired marinade that complements the mild flavor of Mahi Mahi
- 2 lbs mahi mahi fillets (4 medium)
- 2 tablespoons olive oil
- 2 tablespoons fresh ginger, minced
- 1 tablespoon garlic, minced
- 1 tablespoon fresh lime juice
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons dry red wine
- 1/8 teaspoon cayenne pepper
- (more or less to taste)
Monkey Bread - Orange Vanilla

Preheat the oven to 350 F
- 3 cans (7.5 Ounces Each) Buttermilk Biscuits (not The Flaky Kind), Cold
- 1 cup Sugar
- 2 whole Oranges, Zested
- 1 dash Salt
- 2 sticks Salted Butter
- 3/4 cups Brown Sugar
- 1 Tablespoon Vanilla Extract
Apple Fries

Version 1: In a medium bowl, mix together the milk, flour, egg, baking power and 2 tablespoons of sugar
- Version 1:
- 3 large Granny Smith Apples peeled, cored and cut into wedges
- 3/4 cup milk I use 1%
- 1 cup flour
- 1 egg
- 1 teaspoon baking powder
- 1/2 cup + 2 tablespoons granulated sugar divided use
- 1 tablespoon cinnamon
- oil for frying
- 1 cup caramel sauce or caramel dip
- Version 2:
- 4 Granny Smith Apples
- 1/2 cup cornstarch
- 1/2 cup sugar
- 1/8 cup cinnamon
- frying oil
- whipped cream of choice
- Version 3:
- For the Apples:
- 4 to 5 tart apples we used Pink Ladies
- 1 cup buttermilk
- 1 cup sugar
- Wondra flour
- vegetable oil for frying
- cinnamon and sugar to taste
- For the Dip:
- 8 oz cream cheese
- 8 oz Cool Whip or 1 cup whipping cream with 1/2 cup sugar- whipped until stiff
- 1 cup caramel sauce store bought or homemade (see above)
Chicken Parmigiana

- SAUCE
- 1 * 1 onions, chopped
- 5 * 5 garlic cloves, minced
- 1 * 1 bunch parsley, finely chopped
- 1/4 * 1/4 cup vegetable oil
- 1 * 1 (29 ounce) can Italian-style stewed tomatoes, undrained
- 1 * 1 (15 ounce) can Italian-style tomato sauce
- 1 * 1 (6 ounce) can tomato paste
- 1/4 * 1/4 teaspoon dried oregano, heaping
- 1/2 * 1/2 teaspoon dried sweet basil leaves, heaping
- 1/4 * 1/4 teaspoon salt
- 1/4 * 1/4 teaspoon black pepper
- 2 * 2 teaspoons granulated sugar
- CHICKEN
- 1 * 1 eggs
- 1/4 * 1/4 cup milk
- 1 * 1 dash salt
- 1 * 1 dash black pepper
- 1 * 1 cup Italian seasoned breadcrumbs
- 1 * 1 tablespoon fresh parmesan cheese, grated
- 1 * 1 dash salt
- 1 * 1 dash black pepper
- 4 * 4 boneless skinless chicken breasts
- 1/4 * 1/4 cup vegetable oil
- 1/4 * 1/4 cup fresh parmesan cheese, grated
- 1 * 1 cup mozzarella cheese, grated
- 1 * 1 (12 ounce) pasta, cooked al dente
Pear and Walnut Muffins

Preheat oven to 400°. Place the walnuts in your food processor and pulse until they are finely ground
- 1/2 cup chopped walnuts
- 1 cup all-purpose flour
- 1/3 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2/3 cup packed brown sugar
- 2 tblsp canola oil
- 2 tsp vanilla extract
- 8 oz plain Greek yogurt (Stonyfield)
- 1 large egg
- 1 1/2 cups finely diced peeled pear (bosc)
- Cooking spray
- 3 tblsp turbinado sugar

- 2-1/2 cups all-purpose flour
- 3/4 cup sugar, divided
- 1 cup cold butter
- 1/2 cup finely chopped maraschino cherries, drained
- 12 squares (1 ounce each) white baking chocolate, finely chopped, divided
- 1/2 teaspoon almond extract
- 2 teaspoons shortening
- Coarse sugar and red edible glitter
Italian Brunch Torte

Preheat oven to 350°. Place a greased 9-in
- 2 tubes (8 ounces each) refrigerated crescent rolls, divided
- 1 teaspoon olive oil
- 1 package (6 ounces) fresh baby spinach
- 1 cup sliced fresh mushrooms (substitute diced onion?)
- 7 eggs
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 1/8 teaspoon pepper
- 1/2 pound thinly sliced deli ham
- 1/2 pound thinly sliced hard salami
- 1/2 pound sliced provolone cheese
- 2 jars (12 ounces each) roasted sweet red peppers, drained, sliced and patted dry (cut down to 1 jar?)
Lemon Pudding Dessert

In a bowl, cut butter into the flour until crumbly
- 1 cup cold butter, cubed
- 2 cups all-purpose flour
- optional: crushed pecans or walnuts to add to the crust
- 1 package (8 ounces) cream cheese, softened (another recipe called for two packages of cream cheese instead)
- 1 cup confectioners' sugar
- 1 carton (8 ounces) frozen whipped topping, thawed, divided (another recipe used the 12-oz carton)
- 3 cups cold milk (another recipe used 3 1/2 cups)
- 2 packages (3.4 ounces each) instant lemon pudding mix

- 2 tsp. vanilla extract
- 2 Tablespoons fresh lemon zest, lightly packed
- 2 cups flour
- 3/4 tsp. salt

- 1 lb. (4 sticks) unsalted butter at room temperature
- 1 1/2 lbs powdered sugar
- 2 tsp. vanilla extract
- 1 Tablespoon lightly packed fresh lemon zest finely zested from a microplane
