BLT Pasta
By 1For_Him
1. Cook pasta according to package directions, omitting salt and fat
- 8 ounces uncooked mezze penne pasta
- 6 center-cut bacon slices
- 2 cups grape tomatoes, halved
- 1/4 teaspoon kosher salt
- 1 (6-ounce) package baby spinach
- 1/2 teaspoon freshly ground black pepper
- 1 ounce fresh Romano cheese, finely grated (about 1/4 cup)
Chicken Stock

Place the chicken in a large pot over high heat
- 4 * 4 pounds chicken
- 7 * 7 cups water
- 1 * 1 large onion, halved
- 3 * 3 stalks celery
- 3 * 3 carrots, cut into 2 inch pieces
- 1 * 1 bay leaf
- 1 * 1 teaspoon grated fresh ginger
- * salt to taste
- * garlic, thyme, parsley, basil, black pepper
Skillet-Toasted Penne with Chicken Sausage

1. Bring stock to a simmer in a saucepan (do not boil)
- 6 cups unsalted chicken stock (such as Swanson)
- 2 tablespoons olive oil, divided
- 8 ounces uncooked penne pasta
- 1 cup sliced sweet onion
- 13 ounces Italian chicken sausage, casings removed
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced Calabrian chiles or hot red chiles
- 1/4 teaspoon kosher salt
- 0.5 ounces grated Parmigiano-Reggiano cheese (about 2 tablespoons)
- Oregano leaves (optional)
Bruschetta Pizza (Pizza Ree-a)

For Crust: Sprinkle yeast over 3/4 cups warm (not lukewarm) water
- whole Unbaked Pizza Crust:
- 1 teaspoon (SCANT) Active Dry Yeast
- 3/4 cups Warm Water
- 2 cups All-purpose Flour
- 3/4 teaspoons Kosher Salt
- 3 Tablespoons Olive Oil
- Olive Oil
- Salt And Pepper, to taste
- 1/4 cup Prepared Pesto
- 5 cloves Garlic, Minced
- 1 pint Red Grape Tomatoes, Halved Lengthwise
- 1 pint Yellow Grape Tomatoes, Halved Lenthwise
- 1 Tablespoon Balsamic Vinegar
- 16 whole Basil Leaves (chiffonade)
- 6 ounces, weight Mozzarella, Grated
- 1/4 cup Grated Parmesan Or Romano
- 1/2 cup Fontina Cheese
- 4 ounces, weight Goat Cheese Crumbled
Cranberry Nut muffins

In a bowl, combine the flour, sugar, baking powder and salt
- 2 * 2 cups all-purpose flour
- 1 * 1 cup sugar
- 3 * 3 teaspoons baking powder
- 3/4 * 3/4 teaspoon salt
- 1/2 * 1/2 cup orange juice
- 1/2 * 1/2 cup milk
- 1/3 * 1/3 cup butter, melted
- 1 * 1 egg, beaten
- 1-1/2 * 1-1/2 cups fresh or frozen cranberries, halved
- 1/2 * 1/2 cup chopped pecans
- 2 * 2 tablespoons grated orange peel
Crock Pot Garlic Brown Sugar Chicken

The house smells wonderful while this is cooking!
- 1 large chicken, cut into serving pieces
- 1/2 cup packed brown sugar
- 2/3 cup vinegar
- 1/4 cup Sprite or 1/4 cup 7-Up soda
- 2 -3 tablespoons minced garlic
- 2 tablespoons soy sauce
- 1 teaspoon pepper (regular black or cayenne)
Maple Pecan Layer Cake

1. Preheat oven to 350F. Butter and flour two 9" round cake pans and line with parchment paper
- Cake:
- 2/3 cup unsalted butter, softened
- 1 1/3 cups sugar
- 4 eggs
- 1 1/2 tsp vanilla extract
- 1 cup all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1 cup finely grated or ground pecans, toasted
- 2/3 cup sour cream (or plain yogurt)
- Icing:
- 3 cups powdered sugar, sifted
- 1/2 cup softened unsalted butter
- 1/2 cup maple syrup
- 1/4 cup finely chopped toasted pecans
Classic Waldorf Salad

Sprinkle apples with sugar, lemon juice, and salt
- 2 cups diced tart apples
- 1 T sugar
- 1/2 tsp lemon juice
- dash salt
- 1/2 cup diced celery
- 1/2 cup broken walnuts
- 1/4 cup Miracle Whip
- 1/2 cup Cool Whip
- 1/2 cup mini marshmallows
- 1 cup halved red grapes
Corn Casserole

Melt butter. Mix other ingredients with butter until smooth
- 1 stick butter
- 2 eggs
- 1 c sour cream
- 1 can cream corn
- 1 can corn (I usually partially drain)
- 1 box Jiffy corn mix
Marvin's GCB

Spray each dinner roll with Parkay and dust them with a good amount of garlic salt
- 2 lbs ground beef
- 1 (10 count) package bread du jour Italian rolls
- 1 tablespoon lawry's coarse ground garlic salt with parsley
- 5 slices American cheese
- parkay butter-flavored cooking spray
- ranch dressing (Ken's Steakhouse Brand)
