- * FOR THE GNOCCHI:
- * 1 pound (about 3 medium) gold-fleshed potatoes, such as Yukon Gold
- * 1 teaspoon salt

- 1/4 cup sugar
- 2 eggs
- 1 teaspoon salt
- 5 cups all-purpose flour
- CARAMEL: (may want to double)
- 2/3 cup packed brown sugar
- 1/4 cup butter, cubed
- 1/4 cup heavy whipping cream
- 3/4 cup chopped pecans
- 1 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 cup butter, melted (maybe less, could use milk to dip instead to cut down on fat)
