Creamy, Cheesy Grits with Curried Poached Eggs

In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally
- 2 bacon strips, coarsely chopped
- 2 cups vegetable broth
- 1/2 cup quick-cooking corn grits
- 1 cup shredded sharp cheddar cheese
- 2 ounces reduced-fat cream cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons white vinegar
- 2 teaspoons curry powder
- 4 large eggs
- Additional shredded cheddar cheese, optional
- 1 to 2 tablespoons minced chives or parsley
Honey Oat Bread

In a large bowl, or the bowl of a standing mixer, combine the flour, oats, yeast, and salt
- 3 cups (381 grams) all-purpose flour
- 3/4 cups oats (I have used instant and old fashioned, both work great)
- 2 1/4 teaspoons instant yeast
- 1 1/2 teaspoons salt
- 1 cup (250 ml) milk (almond or soy milk for vegan/dairy free)
- 1/4 cup (62 ml) lukewarm water
- 2 tablespoons (28 grams) unsalted butter or margarine
- 1/4 cup honey (agave for vegan)
- 1 1/2 to 2 tablespoons honey (or agave), warmed
- 1 1/2 to 2 tablespoons oats

Bring spinach and water to boil in pot, turn to low, and simmer for 10 minutes
- 3 cups raw baby spinach leaves (or 2 cups frozen chopped spinach)
- 1 1/2 cups fresh or frozen blueberries

Graham Streusel Coffee Cake

- 3 eggs, lightly beaten
- 1/2 teaspoon Spice Island® Pure Vanilla Extract
- 1/4 teaspoon almond extract
- TOPPING:
- 1 egg white
- 1/2 teaspoon Spice Island® Pure Vanilla Extract
- 1/3 cup sugar
- 2/3 cup flaked coconut, toasted
