Parmesan Zucchini Strips

Prep Time: 10 mins Total Time: 35 mins
- 1/3 cup (or more) seasoned bread crumbs (panko for crispiness)
- (If using plain panko, add Italian herb seasoning)
- 1/4 cup parmesan cheese, grated
- 4 small zucchini, quartered lengthwise
- 1 egg, beaten (or egg substitute)
- can add garlic, salt and pepper
- Serve with marinara sauce, optional
Fiery Stuffed Poblanos

Broil peppers 3 in. from heat until skins blister, about 5 minutes
- 8 poblano peppers
- 1 can (15 ounces) black beans, rinsed and drained
- 1 medium zucchini, chopped
- 1 small red onion, chopped
- 4 garlic cloves, minced
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
- 1 cup cooked brown rice
- 1 tablespoon ground cumin
- 1 to 1-1/2 teaspoons ground ancho chile pepper
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded reduced-fat Mexican cheese blend, divided
- 3 green onions, chopped
- 1/2 cup reduced-fat sour cream
Mango Chicken

Put it in the crockpot and turn it on until cooked
- 750 g chicken
- 2 large onions, sliced
- 2 red chillis, sliced (I leave em out if I don't have em handy)
- 1 tsp grated ginger
- 1/4 tsp tumeric
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp cardamon (I like lots more than this! its the nice part)
- 1/2 cup cream (or coconut cream)

- Crust:
- 1 1/2 cups chocolate cookie crumbs (around 31 cookies)
- 5 T unsalted butter, melted
- Filling:
- 10 oz semisweet chocolate, chopped
- 1 8 oz pkg of cream cheese, softened
- 1/2 cup powdered sugar, divided
- 2 cups heavy whipping cream
- 2 tsp vanilla
- Garnish:
- 2 T grated semisweet chocolate (about 1 oz)
Pineapple Coconut Sherbet

Whisk together the buttermilk, sugar, and cream of coconut in a large mixing bowl until it is evenly blended

- 1 1/2 cups superfine sugar
