- 1 slice 1/4" thick of peeled fresh ginger
- 1 T olive oil
- 1 T white wine vinegar
- 1 tsp jerk seasoning (onion, thyme, allspice, pepper, cinnamon, cayenne, salt)
- 1 tsp ground allspice
- 1/4 tsp salt
- 4 chicken breasts
- 1/2 mango, peeled and finely chopped
- 1 T fresh cilantro, chopped
