Chocolate Chip Pancakes

Use with Sneaky chef make-aheads
- 3/4 cups flour blend (all-purpose, soft ww, wheat germ)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup blanched, slivered almonds, finely ground in food processor
- 1/2 cup unsweetened applesauce or grated fresh apple
- 1/4 cup plain yogurt
- 1 tsp vanilla
- 2 T milk
- 1 egg
- 2 T honey or pure maple syrup
- 1/4 cup chocolate chips
- Butter or cooking spray for greasing skillet
Frosted Pumpkin Bars

Combine ingredients and pour into a greased cookie sheet
- Bars:
- 4 eggs, beaten
- 2 cups sugar
- 1 can pumpkin (15 oz)
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 cups flour
- 1 tsp cinnamon
- 1 cup oil (or 1/2 cup oil, 1/2 cup applesauce)
- 1 cup nuts
- Frosting:
- 3/4 lb powdered sugar
- 3 oz cream cheese
- 6 T butter
- 1 tsp vanilla
- 1 T milk
Black Bean Tart With Chili Crust

A friend of mine surprised us with this for dinner one night
- For Crust:
- 1 1/4 cups all-purpose flour (or reduce to 3/4 cup and add 1/2 cup cornmeal)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 cup chilled butter, cut into bits
- 6 tablespoons ice water
- For Filling:
- 4 (14 ounce) cans black beans, rinsed and drained, divided (Or reduce to 2 cans and use 2 cups chicken)
- 2 tablespoons sour cream
- salt and pepper
- 1 tablespoon vegetable oil
- 1 yellow onion, chopped (or can use green onion)
- 10 ounces frozen corn, thawed
- 1 green or red bell pepper, chopped
- 1 bunch cilantro, chopped
- 1 1/2 cups monterey jack cheese, grated
- 2 -3 fresh jalapeno peppers, chopped (and seeded) (optional)
- Lime Sour Cream:
- 1 cup sour cream
- 2 teaspoons fresh lime juice
Cheese Ravioli With Zucchini and Peppers

In a large saucepan, bring cream and broth to a boil
- * 1 cup heavy whipping cream
- * 1/2 cup chicken broth
- * 1 package (9 ounces) refrigerated cheese ravioli
- * 1 small onion, finely chopped
- * 1 tablespoon butter
- * 1 medium sweet red pepper, julienned
- * 3 cups julienned zucchini
- * 1/2 teaspoon salt
- * 1/4 teaspoon garlic powder
- * 3/4 cup grated Parmesan cheese, divided
- * 1 to 2 tablespoons minced fresh basil
- * 1 tablespoon minced fresh parsley

- 2 cups flour (could sub 1/2 cup with wheat germ)
- 1 cup cold butter (2 sticks) (Is this too much? another recipe only used 1/3 cup)
- 1/2 cup powdered sugar
- 4 beaten eggs
- 2 cups white sugar
- 1/2 cup lemon juice
- 1 tsp zest
- 1/2 tsp salt
- 1 tsp baking powder
- 4 T flour (1/4 cup)
Peppered Ribeye Steaks
