French Potato Salad

Place potatoes in a large pot; cover with cold water by 1 inch and season generously with salt
- 2 1/2 pounds fingerling or small new potatoes, halved (quartered if large)
- Coarse salt and ground pepper
- 1/4 cup olive oil
- 3 tablespoons Dijon mustard
- 2 tablespoons sherry vinegar
- 1 small shallot, minced (2 tablespoons)
- 3 tablespoons chopped fresh parsley
- 1 teaspoon chopped fresh thyme
- 1/4 small red onion, sliced
Pumpkin Chocolate Chip Cookies

A secret ingredient or two makes these cookies special
- DRY-
- 1 cup sorghum flour
- 1/2 cup organic coconut flour
- 1/2 cup tapioca starch/flour
- 1/4 cup almond flour or hazelnut flour
- 1 1/2 cups organic light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 3/4 teaspoon xanthan gum
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- WET-
- 2/3 cup organic pumpkin puree
- 1/2 cup organic creamy peanut butter or Sunbutter
- 2 tablespoons light olive oil or grapeseed oil
- 2 free range organic egg whites, or Ener-G Egg Replacer for 2 eggs, mixed (1/4 cup liquid)
- 1 tablespoon bourbon vanilla extract
- ADD IN-
- 1/2 cup dark chocolate chips
Peach Pie (Raw)

SOAKED NUTS-measure raw almonds and brazil nuts, and place them in a water-filled jar to soak overnight
- CRUST-
- 1 cup each of raw almonds and brazil nuts
- (soaked overnight drained and rinsed)
- 1/2 cup unsweetened coconut flakes
- 1/2 teaspoon vanilla
- 1/2 teaspoon of cinnamon
- 6-8 dates (Medjool)
- PIE FILLING-
- 6-8 peaches into chunks
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice (optional)
- 1/4 teaspoon grated nutmeg.
Quick Thousand Island Dressing

- 1/4 cup vegan mayo
- 2 Tbsp chili sauce
- 2 Tbsp sweet pickle relish
- 1/4 tsp onion flakes
Banini (Vanilla Malted Shake)

- 2 tsp dry active yeast
- 1 tsp sugar
- 1/2 cup water
- 2.5-3 cups flour
- 1/2 tsp salt

- 1/3 cup plain greek yogurt

Jicama "Fries"

- 1 package, 1 1/3 pounds, ground turkey breast or lean ground turkey

- VEGETABLE BASE SAUCE
- 1/2 cup organic raw chic pea miso
- 1/2 cup soaked sun-dried tomato
- 1/2 medium organic white onion
- 1/2 cup filtered or spring water
- 1 tsp ground organic black pepper
- 1 tsp organic cumin
- water if needed to get things moving
- VEGGIES CHOPPED
- zucchini
- celery
- onion
- red or yellow bell pepper
- mushroom of choice (optional).
- TOPPING
- 1/2 medium sized head of cauliflower (chop so it will blend in the food processor)
