Pear, Pecan and Cherry Stuffing

- 1/4 C butter
- 1 T finely chopped fresh ginger
- 2 onions, diced
- 2 ribs celery, diced
- 2 pears, chopped
- 1/2 C dried cherries
- 8 fresh sage leaves, finely chopped
- 1/2 tsp each salt and pepper
- 1/2 C sliced almonds, toasted
- 1/2 C chopped fresh parsley
- 1 loaf day-old Italian bread or multigrain bread, cubed (about 12 cups)
- 3/4 C sodium-reduced chicken broth or vegetable broth
Steak Fondue

Combine marinade ingredients in bowl
- MARINADE:
- 1/2 cup sherry
- 1/4 cup fancy molasses
- 1 tablespoon lemon juice
- 1 tablespoon soy sauce
- 1 tablespoon cooking oil
- 1 tablespoon ketchup
- 1/2 teaspoon ground ginger
- 1/4 teaspoon hot pepper sauce
- 1/4 teaspoon garlic powder
- 1 1/2 pounds flank steak, cut on diagonal into long thin 4" strips
Sesame Noodles

Cook pasta in salted water until al dente
- 1 lb cappellini
- 1/4 cup low-sodium soy sauce
- 2 T tahini
- 2 T toasted sesame oil
- 2 pinches cayenne pepper
- 2 cloves garlic, minced
- 1 inch gingerroot, peeled and grated
- 3 scallions
- 1 large carrot, grated
- toasted sesame seeds, for garnish
- crushed red pepper flakes, for garnish
Beef Chow Mein

Cook noodles. Drain well, rinse under cold running water
- 1 lb egg noodles
- 4 T peanut oil
- 1 lb lean beef steak, cut into thin strips
- 2 garlic cloves, crushed
- 1 tsp grated fresh ginger
- 1 green bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 2 celery stalks, sliced
- 8 scallions
- 1 tsp dark brown sugar
- 1 T dry sherry
- 2 T dark soy sauce
- few drops chili sauce
Sweet & Sour Sauce

Combine all ingredients in a saucepan
- 1/3 cup sugar
- 3 tablespoons cornstarch
- 1/2 cup white or cider vinegar
- 2/3 cup unsweetened pineapple juice
- 1 tablespoon salad oil
- 1 tablespoon soy sauce
Southern Green Beans

Cook green beans in a medium skillet in 1 inch simmering water, covered, for 6 mnutes
- 1 1/4 lbs green beans, cut into 1" pieces
- 2 slices bacon, chopped
- 1 small onion, finely chopped
- 2 T red wine vinegar
- 2 tsp sugar

Candadian Maple Ribs

Preheat BBQ to high. Whisk first 7 ingredients together in small bowl
- 2/3 C maple syrup
- 2 T brown sugar, packed
- 2 T ketchup
- 4 tsp apple cider vinegar
- 4 tsp Worcestershire sauce
- 4 tsp prepared mustard
- 1 tsp salt
- 2 1/2 lbs baby back ribs
Scrambled Cabbage

In a large skillet over medium heat, saute garlic in oil for 1 minute
- 1 clove garlic, minced
- 3 tablespoons oil
- 3 cups finely shredded green cabbage
- 1 cup thinly sliced celery
- 1 medium onion, thinly sliced
- 1 cup frozen corn
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon dill
- 1/4 teaspoon pepper
Teriyaki Sesame Sauce for Fondue

Combine first 3 ingredients in saucepan
- 1/2 cup low sodium soy sauce
- 1/4 teaspoon garlic powder
- 1/4 cup white wine or apple juice
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons sesame seeds, toasted
Pomegranate Cosmopolitans

Combine ingredients in a large pitcher
- 2 C good vodka
- 1 C orange liqueur
- 1 C cranberry juice cocktail
- 1/2 C bottled pomegranate juice
- 1/2 C freshly squeezed lime juice (4 limes)
- thinly sliced limes, for garnish
