Chocolate Martini

Shake with ice and strain into chilled martini glass
- 2 oz Banff Ice Vodka
- 1 oz of BOLS Creme de Cacao white liqueur
- 2 oz milk (optional)
White Chocolate Fondue

In a heavy medium saucepan, combine sweetened condensed milk, marshmallow cream, and chopped white chocolate
- 1 14-ounce can sweetened condensed milk
- 1 7-ounce jar marshmallow creme
- 8 ounces white chocolate baking squares, chilled
- 1/4 cup creme de cacao or amaretto
- 2 tablespoons milk
- whole fresh strawberries and/or shortbread sticks
Pasta with Green Vegetables

Cook pasta with olive oil for 8-10 minutes or until tender
- Sauce:
- 2 C gemelli of other pasta shape
- 1 T olive oil
- 2 T chopped fresh parsley
- 2 T freshly grated Parmesan cheese
- salt and pepper
- 1 head of green broccoli, cut into flowerets
- zuccini, sliced
- 8 ozs asparagus spears, trimmed
- 4 1/2 ozs snow peas
- 1 C frozen peas
- 2 T butter
- 3 T vegetable stock
- 5 T heavy cream
- large pinch of freshly grated nutmeg
Spicy Fried Beans

Cut beans into bite-sized lengths
- 1 pound tender green beans
- 2 tablespoons oil
- 1 medium onion, finely sliced
- 1 teaspoon finely chopped fresh ginger
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 cup hot water
- 1/2 teaspoon garam masala
Steamed Cranberry Pudding

Serve with Creamy Pudding Sauce
- 2 C cranberries, halved
- 1 1/3 C flour
- 1/2 tsp baking powder
- 1 large egg
- 1/4 C mild molasses
- 1/4 C golden corn syrup
- 1 tsp vanilla
- 2 tsp baking soda
- 1/3 C Hot water
Wilted Spinach

Heat oil in a Dutch oven over medium heat
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1 slice bacon, cut up
- 1 clove garlic, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon nutmeg
- 1 pound spinach, trimmed and washed
- 2 tablespoons lime juice
Apple Spice Cake

Preheat oven to 350. Grease and 8-inch or 9-inch square cake pan
- 1 3/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup shortening
- 1 1/4 cups lightly packed brown sugar
- 2 eggs
- 1/2 cup sweetened applesauce
- 2/3 cup milk
Fennel Slaw Salad

Place raisins in a small dish,m vocer with the orange juice and hot water
- 2 T golden raisins
- Juice of 1 orange
- 2 to 3 T ot water
- 2 bulbs fresh fennel, trimmed of tops, cored and thinly sliced lengthwise
- 1 medium head radicchio lettuce, shredded
- 4 scallions, thinly sliced on an angle
- handful parsley, chopped
- 3 T pignali nuts, toasted
- 2 T balsamic vinegar
- 3 T extra-virgin olive oil
- Coarse salt and freshly ground black pepper, to taste
Golden Mojito

Gently muddle the rum, syrup, lime wedges and mint
- 1 oz Brugal Anejo Rum
- 1 oz simple syrup
- 4 lime wedges
- small handful of mint leaves
- ginger ale to top
Artichoke Dip

Blend first 5 ingredients
- 1 clove garlic, finely minced
- 1 T grated onion
- 1 C mayonnaise
- 1/4 tsp cayenne
- 2 T Parmesan cheese
- salt and white pepper
- 1 14 oz can artichoke hearts
- paprika
- pita bread, cut into triangles and toasted
