Apricot Oatmeal Cake

Pour boiling water over oats
- 1 1/4 cups boiling water
- 1 cup oats
- 1 1/4 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 cup butter
- 1 1/2 cups packed brown sugar
- 2 eggs
- 3/4 cup finely chopped dried apricots
- TOPPING
- 3 tablespoons butter
- 1/2 cup packed brown sugar
- 3 tablespoons light cream
- 1 cup flaked coconut
- 1/2 cup nuts
Margarita Granita

Combine all ingredients in a blender and blend on high, 1 or 2 minutes or until smooth and frothy
- Juice of 2 limes
- 1 tray ice cubes
- 1 pint lime sherbet
- 4 shots good quality tequila
- 2 shots orange liqueur, such as Cointreau
Artichoke Spinach Dip

Chop artichoke hearts in food processor
- 340 milliliters jar artichokes, drained
- 3/4 C mayonnaise
- 1/2 teaspoon grated lemon peel
- salt and pepper
- 10 ounces fresh spinach
- 3 tablespoons lemon juice
- tabasco sauce, to taste
Italian Chocolate Truffles

Melt dark chocolate with the liqueur in a bowl set over saucepan of hot water, stirring until well combined
- 6 oz dark chocolate
- 2 T almond-flavoured liqueur or orange-flavoured
- 3 T sweet butter
- 1/4 C icing sugar
- 1/2 C ground almonds
- 1 3/4 oz grated milk chocolate
Champagne Punch 2

In a punch bowl, combine all ingredients
- 1 750-ml bottle champagne, chilled
- 2 cups ginger ale, chilled
- 1/3 cup apricot brandy
- 1 cup fresh strawberries
- 4 orange slices
- 3 lemon slices
- 3 lime slices
Grilled Aspargus Risotto

Pre-heat grill to medium-high
- 1 lb asparagus, trimmed
- 1/4 C olive oil, divided
- salt and pepper
- 1/4 C inced shallots
- 2 C Arborio rice
- 1/2 C dry white wie
- 4 C chicken broth
- 1/2 C parmesa
- 1 T unsalted butter
Ripe Peaches with Port

Place peaches in a bowl, sprinkle with sugar and add port
- 4 ripe peaches, cliced
- 2 tsp sugar
- 4 shots port wine
- 4 scoops vanilla ice cream
Citrus Martini Cooler

- 1 orange
- 1 lemon
- 1 lime
- 1 cup citron vodka
- 2 tablespoons sugar
- 2 tablespoons vermouth
- 2 cups orange juice
- 1 cup tonic water
- 1 cup lime cordial
- ice cubes

- 1 cup chopped pecans
- 1 520 gram yellow cake mix*******
- 1 99 gram Jello vanilla instant pudding and pie filling
- 4 eggs
- 1/2 cup cold water
- 1/2 cup cooking oil
- 1/2 cup Bacardi Amber Rum
- GLAZE:
- 1/2 cup butter
- 1/4 cup water
- 1 cup sugar
- 1/2 cup Bacardi Amber Rum
Sweet Potato Carrot Bisque

Put both carrots and sweet potato into large kettle with chicken broth and simmer until tender (about 20 minutes)
- 1 T butter
- 1/3 Cup chopped onion
- 32 oz chicken broth
- 2 Cups chopped carrots
- 1 large sweet potato, peeled and chopped
- 1 tsp sugar
- 1/2 tsp curry
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp lemon juice
- 1/2 Cup plain yogurt
