Casual Beer Fondue

Melt butter in saucepan. Mix in flour
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups beer
- 2 cups grated medium cheddar
- 2 cups gouda or edam cheese
- 2 teaspoons onion flakes
- 1 teaspoon dry mustard
- pinch garlic powder
Lemon Thyme Dip

Combine all ingredients together
- 1 C sour cream
- 1/2 C mayonaisse
- finely grated zest and juice of 1 lemon
- 1 T chopped fresh thyme
- coarse salt and freshly grated pepper to taste
Buttermilk Cherry Focaccia

In large bowl, dissolve 1 tsp of the sugar in warm water
- TOPPING:
- 3/4 C sugar
- 1/4 C warm water
- 1 T active dry yeast
- 1 1/4 C buttermilk
- 2 T butter, melted
- 1 egg, beaten
- 1 1/2 tsp salt
- 1/2 tsp grated orange rind
- 4 C all-purpose flour (approx)
- 1 1/2 C dried cherries
- 1 egg, beaten
- 2 tsp coarse sugar
Sugar Plums

Trim stems from figs and cut them in half
- 10 dried figs
- 1/3 Cup almonds, sliced or slivered
- 3 T unsweetened cocoa
- 1/4 tsp cinnamon
- 1/4 Cup honey
- 1 tsp grated orange zest
- 1/4 tsp almond or vanilla extract
- sugar for rolling
Skewered Ginger Beef

In large resealable plastic bag, combine first 8 ingredients; add steak
- 1 C sugar
- 1 C soy sauce
- 1/2 C vegetable oil
- 1 bunch green onions, sliced
- 6 garlic cloves, minced
- 1/4 C sesame seeds, toasted
- 3/4 tsp ground ginger or 2 tsp grated fresh
- 2 tsp pepper
- 2 lbs beef sirloin steak, cut into 1/4" strips
Yule Log

With rack in middle position, preheat oven to 350
- Yule Log:
- 5 eggs
- 3/4 C flour
- 1/2 tsp baking powder
- 2 T unsalted butter, melted
- 1/2 C sugar
- Topping:
- 1/2 C raspberry or strawberry jam
- 1 1/2 C 35% cream
- 12 oz white chocolate, chopped
Fresh Fruit Fritters with Bailery Irish Almond Cream

Fritters: Marinate fruit with Kirsh and lemon
- Fritters:
- 1 tsp compressed yeast
- 1/3 C milk
- 1 C plus 2 T flour
- 1/4 C beer
- 1 egg yolk
- pinch of salt
- 2 1/2 T walnut oil
- 1 lb fresh berries
- 1/2 C sugar
- 1/4 C Kirsch
- Juice of 1 lemon
- 1 1/2 egg whites
- Oil for frying
- Almond Cream:
- 2 1/2 C whipping cream
- 1/2 C icing sugar
- 1/4 tsp vanilla
- 1/4 C Baileys Original
- Toasted almond slices
Twice Baked Potateos with Pesto

Scrub and prick potatoes. Rub a little salt into the skins and place on a baking sheet
- 4 baking potatoes
- 2/3 C heavy cream
- 1 T lemon juice
- 2 cloves garlic, crushed
- 1/3 C vegetable stock
- 3 T chopped fresh basil
- 2 T grated Parmesan
- salt and pepper
White Pizza Sauce

Measure first 5 ingredients into small saucepan
- 1/3 C flour
- 3/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp paprika
- 1/8 tsp onion powder
- 2 C mlk
- 1 T butter, optional
Oatmeal Cookie Martini

Fill shaker with ice. Add ingredients and shake vigorously to clend and chill
- 1 1/2 oz butterscotch schnapps
- 1 oz Irish cream liqueur
- dash Amaretto
- pinch ground cinnamon
- cinnamon stick for garnish
