- 2 1/2 Cups sifted cake flour
- 1 1/2 Cups sugar
- 3 tsp baking powder
- 1 tsp Salt
- 1/2 Cup soft butter
- 1 Cup milk
- 3 eggs
- 1 1/2 tsp vanilla
Chicken Sandwiches Veronique

Stir together chicken, celery, grapes, pecans and cocout
- 3 1/2 C cubed cooked chicken
- 1 C chopped celery
- 3/4 C seedless grapes, halved
- 1/2 C chopped pecans
- 1/4 C coconut flakes

- 1/4 C heavy cream, whipped

Lemon Poppy Seed Thins

In bowl, beat butter with 1/2 C of teh sugar until fluffy
- 1 C butter, softened
- 2/3 C granulated sugar
- 1 egg, separated
- 2 T finely grated lemon rind
- 1/4 C lemon juice
- 3 C all-purpose flour
- 2 T poppy seeds
- 1 1/2 tsp baking powder
- 1/4 tsp salt

- 1 cup whipping cream
- 1/2 cup firmly packed brown sugar
- 2 teaspoons cornstarch
- 1 tablespoon water
- 3 tablespoons rum
Spiced Crumb Cake

Crumb Topping: In bowl, stir together brown and granulated sugars, cardomom and salt; stir in butter
- Crumb topping:
- 1/2 C unsalted butter, softened
- 1/2 C sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 C flour
- 1 tsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp ground cardomom
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 C sour cream
- 2 tsp icing sugar
- 1/2 C packed dark brown sugar
- 2 T sugar
- 1/4 tsp ground cardomom
- pinch salt
- 1/3 C unsalted butter, melted and warm
- 1 C flour
- 1/4 C ground almonds or whole wheat flour
Blueberry Loaf

Cream butter and sugar together well
- Glaze, heat and stir until dissolved:
- 1/2 C butter, softened
- 1 C sugar
- 2 large eggs
- 2/3 C buttermilk
- 1 medium lemon, grated peel
- 2 C flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 C blueberries
- 1 T flour
- 3 T lemon juice
- 1/4 C sugar
Old-Fashioned Shortcake

In a medium bowl, combine sugar, baking powder, grated rind and flour
- Filling:
- 625 ml all-purpose flour
- 50 ml sugar
- 20 ml baking powder
- grated orange rind
- 150 ml butter
- 250 ml sour cream
- 2 large eggs
- 5 ml vanilla extract
- 1 L prepared fruit (blueberries, strawberries, raspberries)
- 75 ml sugar
- 500 ml whipping cream
- 125 ml icing sugar
Malaysian Sesame Chicken

Marinade; In large gowl, stir together the garlic, gingerroot, lime rind and pepper
- Marinade:
- 1 lb boneless skinless chicken breasts
- 1 T white sesame seeds
- 24 short bamboo skewers, soaked
- 2 large cloves garlic, peeled and finely grated
- 1 T finely grated gingerroot
- 1/4 tsp finely grated lime rind
- 1/4 tsp freshly ground pepper
- 2 T ketjap manis
- 1 T canola oil
- 1/2 tsp dark sesame oil
