Spicy Threaded Beef

Cut steak on diagonal across grain into 1/2 inch thick slices
- 1 1/2 lbs flank steak
- 1/4 C low soduim soy sauce
- 1/4 C Tequila
- freshly squeezed juice of 2 limes
- 3 small hot chilies, seeds removved and chopped fine
- 4 garlic cloves, minced
- 1 T finely grated gingerroot
- 1 T canola oil
- 12 bamboo skewers, soaked
- 1/2 C orange juice
- 1 T brown sugar, packed
- 2 tsp cornstarch
Jerked Chicken or Pork

Rub meat with jerk marinade
- JERK MARINADE, blenderize to make a thick paste:
- 3 - 4 lbs pork loin OR
- 6 bone-in chicken breast
- 1 tsp black pepper
- 1 tsp thyme
- 1 tsp cayenne
- 1 tsp allspice
- 1 tsp brown sugar
- 1 tsp salt
- 1/2 tsp nutmeg or cinnamon
- 1/4 C vegetable oil
- 1/4 C orange juice
- 2 T lime juice
- 2 T soy sauce
- 1 small onion, finley chopped
- 4 cloves garlic, finley chopped
- 1 small hot chile, seeded and chopped
Gin Slush (Auntie Karen's)

Boil 2 cups of water. Add 4 tea bags and let steep until very strong

Blueberry Sauce

Combine all ingredients together in saucepan
- 10 oz blueberries, fresh or frozen
- 1/2 C water
- 1/2 C sugar
- 1 T cornstarch
- 1 T lemon juice
Carrot Coffee Cake

Beat eggs, sugar, oil and vanilla for 1 minute
- 2 eggs
- 1 cup sugar
- 1/2 cup oil
- 1 teaspoon vanilla
- 1 cup grated carrot
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 cup nuts
- TOPPING
- 1 tablespoon melted butter
- 1/4 cup nuts
- 1/4 cup brown sugar
- 1 tablespoon milk
Baked Lemon Chicken

In a shallow bowl, combine flour and pepper; dredge the chicken
- 3 tablespoons all-purpose flour
- 1/4 teaspoon pepper
- 4 boneless skinless chicken breast, about 1 1/2 pounds
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 tablespoon butter
- 1 cup chicken broth
- 3 tablespoons lemon juice
- 2 teaspoons dried basil
- 1/2 teaspoon dried thyme
- 4 slices lemon
- 2 tablespoons minced fresh basrsley
- Hot cooked rice, optional
Basil-Stuffed Steak

With sharp knife, make 5 lengthwise slits 3/4 of the way through the steak
- 1 , 2-2 1/2 lb bonelyss beef top sirloin steak, cut 1 1/2 inches thick
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp dried parsley flakes
- 1 C lightly packed fresh basil leaves, coarsely snipped
- 1/4 C finely chopped onion
- 2 tsp bottled minced garlic (4 cloves)
- 1 1/2 tsp finely snipped fresh rosemary or 1/2 tsp dried, crushed
- 1 tsp olive oil
White Sangria

Combine sugar, apple liqueur, lime, lemon, peaches, and apples in a large pitche
- 3 T sugar
- 3 shots apple liqueur
- 1 lime, sliced
- 1 lemon, sliced
- 2 ripe peaches, pitted and cut into wedges
- 3 ripe green apples, cored and cut into wedges
- 1 bottle dry white spanish wine, such as white Riaja
- 1 pint raspberries
- sparkling soda water, for topping off sangria at table
Kahlua Mudslide

Pour Kahlua, Irish cream, vodka and cream over ice
- 1/2 ounce Kahlua
- 1/2 ounce Bailey's Irish Cream
- 1/2 ounce vodka
- 1 ounce cream

- 1/2 cup water
- 1/4 cup oil
