Maple Glazed Meatballs

Combine ketchup syrup, soy sauce, tapioca, allspice and mustard in slow cooker
- 1 1/2 C ketchup
- 1 C maple syrup
- 1/3 C reduced-sodium soy sauce
- 1 T quick cooking tapioca
- 1 1/2 tsp ground allspice
- 1 tsp dry mustard
- 32 oz frozen fully cooked meatballs, partially thawed and separated
- 1 20oz can pineapple chunks in juice, drained
Rum Pineapple

- 1/3 C dark rum
- 1/3 C liquid honey

Champagne and Orange Juice Parfaits

In saucepan, gently warm champagne, orange juice, sugar and honey, stirring
- 2 C champagne or sparkling white wine
- 2 C orange jice
- 1/3 C sugar
- 2 T liquid honey
- 2 T unflavoured gelatin
- 1/4 C cold water
- 4 oranges
- 2 C strawberries
- 8 sprigs mint
Pesto Smashed Potatoes

Cut larger potatoes in half and leave small potatoes whole
- 1 1/2 pounds small red-skinned potatoes
- salt, to taste
- 1/2 cup chicken broth
- 1/2 cup pesto
Cowboy Coffee-Rubbed Steak

Rub both sides of steak with coffee spice mixture
- 4 bone-in rib eye steaks
- 1 T ground coffee
- 1 T kosher salt
- 2 tsp each chili powder, garlic powder, dried thyme and sugar.
Sun-Dried Tomato Butter

Combine ingredients; let rest
- 4 T unsalted butter at room temperature
- 2 T minced sun-dried tomatoes
- 1 T minced fresh basil
- 1 tsp minced garlic
- salt to taste
Stewed Chicken and Pineapple

Mix the seasoning ingredients together
- Seasoning:
- 2 T light soy sauce
- 1 T oil
- 1 T cornstarch
- 1 tsp salt
- 1/2 tsp sesame oil
- 2 T water
- 1 1/2 lbs chicken breast, cut into cubes
- Sauce:
- 1 1/2 tsp cornstarch
- 1 C chicken stock or water
- 2 tsp dark soy sauce
- salt to taste
- 2 T oil
- 1 onion, peeled and cut into chunks
- 2 green onions, finely chopped
- 1 " fresh root ginger, peeled and thinly sliced
- 4-5 pineapple rigns, cut into chunks
Cocoa Devil's Food Cake

In small bowl conbine cocoa with boiling water, mixing well
- 1/2 Cup Sifted unsweetened cocoa
- 1 Cup boiling water
- 2 1/4 Cups sifted all-purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 Cup soft butter
- 2 Cups sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup buttermilk or sour milk.
Presto Pesto Burgers

Combine first 6 ingredients in large bowl
- Basil Mayo:
- 1 egg
- 1 white or brown bread slice, processed into crumbs
- 1/2 C finely chopped onion
- 1/4 C grated Parmesan
- 2 T basil pesto
- 1 garlic clove, minces
- 1 lb lean ground beef
- 1/4 C mayo
- 2 T basil pesto
- 4 onion (or hamburger) buns, split and toasted
- 1 1/4 C roasted red peppers, drained, blotted dry, cut into strips
- 2 T choppped fresh basil (optional)
