Lemon Rice Pilaf

Heat a medium saucepan over medium heat
- 1 T extra-virgin olive oil
- 1 T butter
- 1 large shallot, finely chopped
- 1 1/2 cups long-grain rice
- 1/2 cup dry white wine
- a few sprigs fresh thyme, leaves stripped and chopped
- 2 cups chicken broth
- 1 C water
- grated zest of 1 lemon
- handful chopped fresh flat-leaf parsley
- slivered almonds, toasted, for garnish
Burritos

Trim steak of any excess fat any cut into 3/4 inch cubes
- 1 pound sirloin steak
- 1 teaspoon olive oil
- 1 onion, finely diced
- 1 cinnamon stick
- 4 cloves
- 1 bay leaf
- 2 cups beef stock
- 4 8-inch tortillas
Carrot and Nut Coleslaw

In a large salad bowl, mix together the carrot, onion, celery and cabbage
- 1 large carrot, grated
- 1 small onion, finely chopped
- 2 celery stalk, chopped
- 1/4 small hard white cabbage, shredded
- 1 tablespoon chopped parsley
- 4 tablespoons sesame oil
- 1/2 teaspoon poppy seeds
- 1/2 cup cashews
- 2 tablespoons white wine vinegar, or cider vinegar
- salt and pepper
- parsley sprig, to garnish
Cold Sesame Noodles with Vegetables

Cook linguine in large pot of boiling water according to package directions Drain, reserving 1/2 cup cooking water
- 250 grams whole wheat linguine
- 1/3 cup cilantro
- 2 tablespoons peanut butter
- 2 tablespoons soy sauce
- 2 1/2 teaspoons honey
- 1 tablespoon rice vinegar or cider vinegar
- 1 tablespoon dark sesame oil
- 2 cloves garlic, peeled
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne
- 2 carrots, slivered
- 1 red bell pepper, slivered
- 1 large celery stalk, slivered
- 2 scallions, slivered
Blueberry Shortcakes with White Chocolate Blueberry Cream

Biscuits: Combine dry ingredients; cut in butter; stir in blueberries
- Biscuits:
- 2 C flour
- 1/2 tsp salt
- 1 T baking powder
- 4 T sugar, divided
- 1/4 lb butter, cold and cut in small pieces
- 1 C fresh blueberries
- 1 egg
- 1/2 C whipping cream or 1/2 & 1/2
- 1 egg white, lightly beaten to brushing
- Filling:
- 6 oz white chocolate
- 1 C whipping cream
- 1/2 C light sour cream
- 1 C fresh blueberries
Strawberry Cream Dessert

Crust: Melt butter in saucepan
- Crust:
- 1/2 C butter
- 2 C graham cracker crumbs
- 1/4 C brown sugar, packed
- Filling:
- 15 oz frozen strawberries in syrup, thawed, syrup reserved
- 3 oz strawberry jello
- 1/2 C sugar
- 2 T lemon juice
- 1 C whipping cream
- Topping:
- 1 C whipping cream
- 2 tsp sugar
- 1/2 tsp vanilla
- 1/2 C reserved crumbs

- 16 ounces frozen cut broccoli
- 3 cups cubed fully cooked ham
- 1 cup shredded mozzarella cheese
- 1 cup shredded parmesan cheese
- 1/3 cup butter
- 1/2 cup half and half
- 1/4 teaspoon garlic powder
