Balsamic Poppy Seed Dressing

- 2 tablespoons orange juice

Veal Medallions with Lemon on a Bed of Spinach

In a skillet over midium heat, combine oil, butter and flour
- 2 T extra-virgin olive oil
- 1 T butter
- 2 T flour
- 1/2 C chicken broth
- 1/2 lb thinly sliced veal scallops
- salt and pepper, to taste
- juice and grated zest of 1 lemon
- handful fresh parsley, finely chopped
- 1/4 C water
- 10 oz baby spinach
- 1/4 tsp nutmeg

- 3/4 cup safflower oil
- 1/3 cup white vinegar, or fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons dijon mustard
- 2 teaspoons sugar
- 1/2 teaspoon paprika
- 1/2 teaspoon dried basil, crumbled
- 1/2 teaspoon dried tarragon, crumbled
- 2 cloves garlic, minced

- 2 cups flour

- 4 medium potatoes
- 4 medium carrot, cut into 1" pieces
- 2 stalks celery, cut into thick pieces
- salt and pepper
- chopped parsley
- 1 cup water
- 1 tablespoon cornstarch
- 1 1/2 cups water
