Ham Fettucine

Melt butter, saute ham for several minutes
- Demi-Glaze:
- 1/2 C butter
- 1 lb chopped ham
- 1 C small peas
- 1/2 - 3/4 C whipping cream
- 5 T Parmesan cheese
- demi-glaze
- 12 oz. pasta - medium egg noodles or fettucine
- 2 T butter
- 2 T flour
- 1 C beef bouillon or consomme
- 2 T sherry
Chocolate Smacks

Bottom layer: Measure first 7 ingredients into bowl
- 1 1/4 C flour
- 1/4 C cocoa
- 1/2 C brown sugar
- 1/2 C butter
- 2 egg yolks
- 1 tsp baking powder
- 1/4 tsp salt
- 2 egg white
- 1 C brown sugar
- 2 T cocoa
- 1 C chopped walnuts
Brandy Sauce

In saucepan, melt butter. Blend in a mixture of flour and sugar
- 1/4 C butter
- 1/4 C flour
- 2/3 C lightly packed brown sugar
- 1 1/2 C milk
- 1/4 C brandy
Cabbage Crunch Salad

Crush noodles and brown in oil
- DRESSING:
- 1 medium head chinese cabbage
- 1 package chicken flavored instant noodles
- 1/4 cup slivered almonds
- 2 green onion, chopped
- 1/2 cup sesame seeds
- 1/2 cup sunflower seeds
- 2 teaspoons cooking oil
- 1/2 cup oil
- 1/4 cup sugar
- 1 tablespoon soy sauce
- 1/4 cup wine vinegar
- 1/2 teaspoon pepper
Spinach Stuffed Meatloaf

Cook bakcon in medium frying pan on medium heat until crips
- 4 bacon slices, diced
- 1/2 C chopped onion
- 1 garlic clove, minces, or 1/4 tsp powder
- 10 oz box frozen chopped spinach, thawed and squeezed dry
- 1/4 C chopped dried apricot
- 1/2 tsp pepper
- 1 large egg
- 1/2 C crushed buttery crackers
- 2 T balsamic vinegar
- 1/2 tsp seasoned salt
- 1 lb lean round beef
- 1/4 C apricot jam
- 1 1/2 T apple cider vinegar

- 2 cups unbleached bread flour
- 1 teaspoon sugar

Hard Sauce

- 1/3 C soft butter
- 1 C sifted icing sugar or lightly packed brown sugar
- 1 tsp vanilla or 1 T brandy, sherry or rum
Chicken Tetrazinni

Simmer chicken in water with salt, onion salt, and celery salt, until tender, about 1 to 1 1/2 hours
- 4 1/2 pounds roasting chicken , cut up
- 3 cups hot water
- 1/2 teaspoon salt
- 1 teaspoon onion salt
- 1/2 teaspoon celery salt
- 250 grams medium egg noodles
- 6 tablespoons butter
- 1 tablespoon lemon juice
- 3 tablespoons flour
- 1/4 teaspoon paprika
- 1/4 teaspoon pepper
- 1/8 teaspoon nutmeg
- 1 cup heavy cream
- 2/3 cup parmesan cheese
Chocolate Pralines

Turn cream and chocolate into 2-quart saucepan, and place over low heat, stirring until chocolate is melted
- 1/2 C heavy cream
- 2 oz squares semi-sweet chocolsate squares,cut up
- 1/3 C Kahlua
- 2 C sugar
- 2 T light corn syrup
- 2 T butter
- 2 1/2 oz. macadamia or other nuts, coarsely chopped
Herb Popovers

Preheat the oven to 450 and oil eight 8oz pyrex custard cups or special popover pans
- 2 C flour
- 1/4 tsp salt
- 2 large eggs
- 1 3/4 C milk
- 1 T unslated buter, melted
- 1/4 C finely chopped fresh dill
- 1/4 C finely chopped fresh flat-leaf parsley
