Spinach Stuffed Meatloaf

Ingredients

  • 4 bacon slices, diced
  • 1/2 C chopped onion
  • 1 garlic clove, minces, or 1/4 tsp powder
  • 10 oz box frozen chopped spinach, thawed and squeezed dry
  • 1/4 C chopped dried apricot
  • 1/2 tsp pepper
  • 1 large egg
  • 1/2 C crushed buttery crackers
  • 2 T balsamic vinegar
  • 1/2 tsp seasoned salt
  • 1 lb lean round beef
  • 1/4 C apricot jam
  • 1 1/2 T apple cider vinegar

Preparation

Step 1

Cook bakcon in medium frying pan on medium heat until crips. Transfer with slotted spoon to paper towels.

Heat 1 T drippings in same pan on medium. Add onion and garlic. Heat and stir for about 3 minutes until starts to soften.

Add next 3 ingredients; stir; remove from heat.

Combine next 4 ingredients in medium bowl. Add ground beef. Mix well. On large sheet of foil, pat out beef mixture to 8x11 rectangle. Spoon spinach mixture lengthwise along centre of rectangle. Sprinkle bacon over top. Fold both long sides over stuffing to enclose. Pinch edges to seal. Holding foil, careffully roll meatloaf onto greased wire rack set on greased baking sheet with sides. Seam side should be down. discard foil.

Bake uncovered in 350 oven for 30 minutes.

Combine jam and apple cider vinegar in small cup. Spread on top of meatloaf. Bake for another 15 minutes until fully cooked. Let stand for 10 minutes before slicing.
