Beef Bourguignon

Cook bacon in skillet over medium heat until crisp
- 6 strips bacon, cut into 1 to 2 inch pieces
- 3 lbs beef rump roast, cut into 1-inch cubes
- 1 large carrot, peeled and sliced
- 1 medium onion, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 3 T all-purpose flour
- 1 can condensed beef broth
- 2 C red or Burgundy wine
- 1/2 lb small white onions, peeled
- 1 T tomato paste
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 1 whole bay leaf
Chicken Caesar Burgers

Combine first 10 ingredients in small bowl
- 1/4 C light salad dressing or mayonnaise
- 1/4 C light sour cream
- 1 T olive oil
- 2 garlic cloves, minced
- 2 tsp lemon juice
- 2 t red wine venegar
- 2 t worcestershire sauce
- 2 tsp sugar
- 1/2 tsp dry mustard
- 4 boneless, skinless, chicken breast halves
- 4 large red onion rings
- 4 large hamburger, or Kaiser, buns
- 2 C torn romaine lettuce
- 1 T grated Parmesan cheese
Parmesan Muffins

Measure first 8 ingredients into large bowl
- 2 C flour
- 1/2 C grated Parmesan cheese
- 1 T baking powder
- 1 tsp parsley flakes
- 1/2 tsp onion powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1 egg
- 1 1/2 C buttermilk
- 1/4 C butter, melted
- 1 T sugar
- 1/2 C grated Parmesan cheese
Meatballs in Pineapple Sauce

- 1 T cooking oil
- 1/3 C finely chopped onion
- 2 tsp finely grated gingerroot
- 14 oz can crushed pineapple, drained and juice reserved
- 1/2 C sweet chili sauce
- 3 T lime juice
- 2 tsp soy sauce
- 1/4 tsp salt
- 2/3 C reserved pineapple juice
- 2 tsp cornstarch
- 1/4 tsp grated lime zest

Beef Stew in Marsala

Brown meat in oil very quickly over high heat
- 3 pounds lean stewing beef
- 2 tablespoons olive oil
- 2 yellow onions, peeled and chopped
- 3 cloves garlic, chopped
- 1/2 cup dry white wine
- 1 cup Marsala wine
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 cup beef broth
- salt and pepper, to taste
Maple Apple Pudding

In saucepan, bring apples and syrup to boil, reduce heat, simmer for 3 minutes
- 4 cups peeled sliced Granny Smith apples
- 2/3 cup maple syrup
- 1/3 cup raisins
- 1 cup flour
- 1/4 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup butter, softened
- 1/2 cup buttermilk
- 1 egg
- 1 teaspoon vanilla
Marshmallow Clouds

Preheat oven to 400. In medium bowl, combine flour, cocoa and soda
- 3 cups flour
- 2/3 cup cocoa powder
- 1/2 teaspoon baking soda
- 1 cup flour
- 1 cup brown sugar
- 1 cup butter
- 2 large eggs
- 2 teaspoons vanilla
- 2 cups semisweet chocolate chips
- 8 ounces miniature marshmallows, frozen
Chicken with Lime Butter

Season chicken with salt and pepper
- 6 boneless skinless chicken breasts
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/3 C vegetable oil
- juice of 1 lime
- 1/2 C butter
- 1 tsp minced chives
- 1/2 tsp dill weed
Simple Stove-Top Stuffing

Saute onion and celery in butter in frying pan over medium for about 5 minutes until onion is soft
- 1 C chopped onion
- 1 C chopped celery, with leaves
- 1/3 C butter
- 1 T parsley flakes
- 1 1/2 tsp poultry seasoning
- 1 tsp chicken bouillon powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 C stale white bread slices, cubed
Beef Stroganoff

- 1 1/2 pounds round steak, 1/4" strips
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 onion, sliced
- 1/4 teaspoon garlic salt
- 1 tablespoon worcestershire sauce
- 1/2 teaspoon paprika
- 1 can condensed beef broth
- 1 tablespoon ketchup
- 2 tablespoons dry red wine
- 3 tablespoons cornstarch
- 1/4 cup water
- 1 cup sour cream
- cooked rice or noodles
