Turkey Stir-Fry with Cashews

Cut turkey into small, thin, bit-size pieces
- 1 pound boneless skinless turkey breast
- 1 tablespoon cornstarch
- 2 tablespoons soy sauce
- 2 teaspoons vegetable oil
- 2 cloves garlic, minced
- 1 medium onion, sliced
- 2 small carrots, sliced thin
- 1 1/2 cups diced celery
- 1 1/2 cups snow peas
- 3/4 cup turkey or chicken stock
- 1/4 cup oyster sauce
- 1 teaspoon cornstarch
- 3/4 cup roasted cashew pieces
- 1/4 teaspoon fresh ground pepper
Beef Ragout

In 1 gallon plastic bag, combine flour, salt and pepper; add meat pieces
- 1/4 cup flour
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 2 pounds stew meat
- 2 medium onions, sliced
- 2 tablespoons oil
- 1 cup dry red wine
- 1/2 cup water
- 1 teaspoon beef bouillon granules
- 1 bay leaf
- 1 cinnamon, if desired
- 4 medium carrots, sliced
- 2 stalks celery, chopped
Gingery Beef Strips

Thinly slice flank steak diagonally across the grain
- 1 , 1 - 1 1/2 lb beef flank steak
- 1 , 10 1/2 oz can condensed beef broth
- 1/4 C soy sauce
- 1 tsp grated gingerroot
- 1 bunch green onions, sliced diagonally into 1" pieces
- 1 clove garlic, crushed
- 3 T cornstarch
- 2 T water
- 3 oz Chinese pea pods
- 1 1/2 C fresh bean sprouts
- cooked rice
Chocolate Peanut Clusters

In top of double boiler, melt chocolate and butterscotch chops
- 6 ounces chocolate chips
- 6 ounces butterscotch chips
- 1 cup dry chow mein noodles
- 1 cup peanuts
Carrot and Mandarin Orange Salad

Peel the carrots and julienne into very fine strips, or grate them in a food processor
- 5 carrots
- 5 sprigs of fresh tarragon
- 2 mandarin oranges
- 2 T Grand Marnier
- 1 T white wine vinegar
- 1/4 C olive oil
- 1/4 C vegetable oil
- 2 T honey
- 1 T mustard

Preheat oven to 350. Grease a 6 cup baking dish
- 2 tablespoons butter, softened
- 3/4 cup superfine sugar
- 1 teaspoon grated lemon rind
- 3 eggs, separated
- 1/4 cup flour
- 1/2 cup lemon juice
- 1 1/2 cups warm milk
- icing sugar, to dust

- 1 1/2 cups spice gumdrops
- 3/4 cup coarsely chopped walnuts
- 1/2 cup golden raisins

- 6 tablespoons cornstarch
- 1/2 teaspoon salt
- 2 cups water
- 4 egg yolks, beaten
- 1 tablespoon grated lemon rind
- 1/2 cup lemon juice
- 3 tablespoons butter
- MERINGUE:
- 5 egg whites, at room temperature
