Tortellini with Spinach-Walnut Pesto

Toast walnut pieces until lightly browned
- 4 oz chopped walnuts
- salt and pepper, to taste
- 36 oz cheere tortellini
- 1 C chicken broth
- 10 oz baby spinach
- 2 cloves garlic
- 2/3 cup grated Parmigiano or Romano
- 1/4 tsp ground nutmeg
- 1/4 C extra-virgin olive oil
Garlic and Chive Potato

Scrub potatoes. Boil just until tender
- 1 pound new potatoes, scrubbed
- 3 tablespoons melted butter
- 2 cloves minced garlic
- 2 tablespoons chopped fresh chives
- 1 tablespoon parmesan cheese
- 1/4 teaspoon each salt and pepper
Californian Beans

Wash and trim beans. Steam for 15 minutes then transfer to serving dish
- 1 pound green beans
- 3 tablespoons olive oil
- 3 tablespoons flour
- 2/3 cup chicken broth
- 2/3 cup light cream
- 1/3 cup ketchup
- 2 teaspoons worcestershire sauce
- 1 teaspoon paprika
- 3 drops tabasco sauce
- 1 tablespoon lemon juice
Pan Cooked Chicken

Season the chicke with salt and pepper
- 4 chicken breast, part boned
- 2 T butter
- 2 T olive oil
- 2 red onions cut in wedges
- 2 T lemon juice
- 2/3 C dry white wine
- 2/3 C chicken stock
- 2 tsp all-purpose flour
- 14 oz artichoke halves, drained and halved
- salt and pepper
- chopped fresh parsley, to garnish
Strawberry Freezer Jam

mash strawberries to yield 1 3/4 cups
- 5 C Whole fresh strawberries, hulled
- 4 C granulated sugar
- 2 T lemon juice, fresh or bottled
- 3 oz liquid pectin
Fresh Tartar Sauce

Combine all ingredients in small bowl
- 1/4 cup light mayonnaise
- 1/4 cup light sour cream
- 1/4 tsp finely grated lemon peel
- 2 tsp freshly squeezed lemon juice
- 1 1/2 tsp chopped fresh parsley
- 1/4 tsp chopped fresh dill
Carrots Cooked in OJ

Cut carrots into thins slices
- 6 medium carrots
- 2 tablespoons butter
- 1 tablespoon light brown sugar
- 1/3 cup fresh orange juice
- grated rind of 1/2 orange
- grated rind or 1/2 lemon
- 1/8 teaspoon ground mace
- salt
Lemon Potatoes

Scrub or peel potatoes and if necessary cut into 2" pieces
- 2 pounds small new potatoes, or other type
- 4 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- grated rind of 1/2 a lemon
- salt and pepper
- 1 teaspoon dried oregano, optional
Florentine Chicken

Cook spinach, drain well transfer to 1 1/2 qt baking dish
- 1 (10 oz) package frozen chopped spinach
- 3 T butter
- 3 T flour
- 1 tsp salt
- dash cayenne pepper
- 1 1/2 C milk
- 1/4 C grated Parmesan
- 1/2 C llight cream
- 2 C diced cooked chicken
- 1/3 C dry bread crumbs
Creamy Dilled Carrots

In a saucepan, combine carrots, water, butter, salt, sugar and pepper
- 4 cups thinly sliced carrots
- 3/4 cup water
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- pinch pepper
- 1 tablespoon flour
- 1/2 cup light cream
- 2 tablespoons chopped fresh dill
