Corn on the Cob with Chili & Lime

In medium pot, bring water to a boil and simmer corn until just tender, 3 - 5 minutes
- 4 ears sweet corn, shucked and cleaned
- 1 lime, cut into wedges
- 1/3 stick butter, cut into pats
- chili powder, for sprinkling
- Salt, to taste
Crumbly Potatoes

Cut each potato into 1/4" slices
- 4 unpeeled medium baking potatoes
- 2 T cooking oil
- 30 cheddar cheese-flavored crackers, crumbles
- 1 tsp parsley flakes
- 1/2 tsp dill weed
- 1/2 tsp seasoned salt
- 1/4 tsp pepper
- 1/8 tsp cayenne
Florentine Turkey Burgers

Combine all ingredients in a large bowl
- 1 pound ground turkey
- 1 cup chopped fresh spinach
- 1/2 cup finely chopped onion
- 1/3 cup bread crumbs
- 2 tablespoons light mayonnaise
- 2 tablespoons worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
Harvest Time Quick Bread

Whisk together eggs, orange rind and jiuce, and butter
- 2 eggs
- 2 tsp grated orange rind
- 1 C orange juice
- 1/3 C butter, melted
- 1 C Nabisco 100% Bran cereal
- 3/4 C chopped dried apricots
- 1 3/4 C flour
- 1/2 C packed brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 C cranberries
Honey Fried Spinach

Using a sharp knife, slice the scallions
- 4 scallions
- 3 tablespoons peanut oil
- 2 cloves garlic, crushed
- 12 ounces baby spinach
- 2 tablespoons dry sherry
- 2 tablespoons hominy, yellow
Greek Turkey Burgers

Melba Sauce

Combine raspberry juice, cornstarch and sugar in saucepan
- 15 oz frozen raspberries, thawed and drained, juice reserved
- 1 1/4 C raspberry jiuce plus water to make
- 4 tsp cornstarch
- 2 T sugar
Swedish Meatballs with Rich Gravy

In large bowl, stir together bread crumbs, onion, milk, egg, salt, allspice and pepper
- 1/2 C fresh bread crumbs
- 1 onion, grated
- 3 T milk
- 1 egg
- 1/2 tsp salt
- 1/4 tsp each allspice and pepper
- 1 lb lean ground beef
- 1 lb lean ground pork
- 1 T each vegetable oil and butter
- 2 T flour
- 1 C sodium-reduced beef broth
- 1/4 C whipping cream (35%)
- 1/4 C lingonberry jelly or red currant jelly
Maple Pudding Chomeur

Wickedly sweet cake-pudding combo
- Sauce:
- 1 C all-purpose flour
- 1/2 C granulated sugar
- 4 tsp baking powder
- 1/4 tsp nutmeg
- 1/4 C milk
- 1/4 C butter, melted
- 1 tsp finely grated lemon rind
- 1/2 C raisins
- 1 1/2 C water
- 1 C maple syrup
- 2 T butter, melted
- 1 tsp cornstarch
Italian Vegetable Saute

- 4 medium carrots, peeled and sliced
- 1 head cauliflower, divided into florets
- 2 cloves garlic, sliced thin
- 3 tablespoons olive oil
- 2 yellow onions, peeled and shredded
- salt and pepper, to taste
- 1/4 cup beef stock
- 2 tablespoons parmesan cheese
