Pineapple Chutney

- 4 C peeled and chopped fresh pineapple, core removed (or canned crushed pineapple with juice)
- 1 C cider vinegar
- 1 C brown sugar, packed
- 1 C golden raisins
- 1/2 green pepper, seeded and minced
- 1/4 C toasted slivered almonds
- 1/2 tsp ground ginger
- 1/2 tsp table salt
- 1/8 tsp cayenne pepper
- 1 garlic clove, minced
Spiral Pasta Salad

In a large bowl, combine pasta, green pepper, celery, tomato and carrot
- Dressing:
- 3 C cooked spiral pasta
- 1/2 C chopped green pepper
- 1/2 C sliced celery
- 1/2 C chopped tomato
- 1/2 C shredded carrot
- 1/4 C vegetable oil
- 1/4 C cider vinegar
- 1/4 C chopped onion
- 2 T ketchup
- 4 tsp sugar
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp dried oregano
- 1/4 tsp ground mustard
- 1/4 tsp paprika
Tuscan-Style Chicken with Rosemarr

Heat a large deep skillet over medium-high heat
- 2 lbs boneless, skinless chicken thighs
- 1 1/2 lbs chicken tenderloins
- salt and pepper
- 3 T extra-virgin olive oil
- 6 cloves garlic, crushed
- 2 T white wine vinegar
- 2 T butter
- 2 shallots, chopped
- 6 sprigs fresh rosemary, leaves stripped and chopped
- 2 T flour
- 1 C dry white wine
- 2 C beef broth
Glazed Beets with Balsamic Vinegar

Wrap beats in foil in single layer
- 2 pounds beets
- 2 teaspoons olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 teaspoon chopped fresh rosemary, or pinch dried
- 1/2 cup water
- salt and pepper, to taste
- 1/4 cup chopped fresh chives
Favourite Lemon Loaf

Measure first 3 ingredients into medium bowl
- Glaze:
- 2 C all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 C butter, softened
- 1 C sugar
- 3 large eggs
- 1/2 C milk
- 1 1/2 T grated lemon zest
- 1/4 C lemon juice
- 1/4 C icing sugar
Whole Wheat Bread Machine Bread

Place ingredients into bread machine in order given
- 1 2/3 C water warm water
- 2 T milk powder
- 2 T margarine
- 2 T sugar
- 2 tsp salt
- 3 1/3 C whole wheat flour
- 1 C white flour
- 1 1/2 tsp yeast
Nutty Cheese Ball

Combine pineapple, cream cheese, salt and onion powder in bowl
- 14 oz can crushed pineapple, well drained
- 12 oz cream cheese, softened
- 1 tsp salt
- 1/4 tsp onion powder
- 3/4 C chopped pecans
- 2 T chopped green pepper
Almond Celery Chicken Stir-Fry
