Potatoes Romanoff

Peel, boil, and mash potatoes
- 6 medium potatoes
- 1 cup sour cream
- 4 green onion, optional
- 1 1/4 cups shredded sharp cheddar cheese
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon paprika
- 1/4 cup shredded sharp cheddar cheese
Jelly Roll

Grease 10x15 jelly roll pan
- Lemon Filling:
- 4 eggs, room temperature
- 1 C granulated sugar
- 1/4 C water
- 1 tsp vanilla
- 1 C flour
- 2 tsp baking powder
- 1/4 tsp salt
- icing sugar
- (can spread raspberry jam over cake as soon as paper is peeled off. Roll cake, cover with towel and cool. (saves rerolling)
- 2 C water
- 6 T cornstarch
- 1 1/2 C sugar
- 1/4 tsp salt
- 1/2 C lemon juice
- 2 eggs
Sauted Potatoes with Lemon and Garlic

Cut potatoes into thin slices, less than 1/4"
- 4 large potatoes, peeled
- 3 tablespoons oil
- 4 tablespoons butter
- grated rind of 1 lemon
- juice of 1 lemon
- 3 tablespoons chopped fresh parsley
- 3 cloves garlic, minced
Gnocchi with Tomato and Fresh Basil

Heat oil in a pan and cook the onion for 2 minutes, or until soft
- 1 T olive oil
- 1 onion, finley chopped
- 2 cloves garlic, crushed
- 1 x 13oz can tomatoes
- 2 T tomato paste
- 1 C cream
- 1/4 C chopped sun-dried tomatoes
- 12 oz fresh potato gnocchi
- 1 T finely chopped fresh basil
- 2 oz pepato cheese, grated
Spaghetti with Creamy Lemon Sauce

Cook the spaghetti in a large pan of rapidly boiling salted water until al dente
- 1 lb spaghetti
- 1 C cream
- 3/4 C chicken stock
- 1 T finely grated lemon rind plus some shredded, to garnish
- 2 T finely chopped fresh parsley
- 2 T chopped fresh chives
Crab Ball

Mash cheese with bork in bowl
- 8 oz cream cheese, softened
- 1/4 tsp hot pepper sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 T chopped green onion
- 1 14 oz can crabmeat, drained, membrane removed
- 1/4 C finely chopped wlnuts
- 2 T chopped fresh parsley, or 2 tsp dried
Honey Nut Carrots

Cook carrots in stock, honey, nutmeg, and salt and pepper until tender crisp
- 1 1/2 pounds carrots, peeled and cut diagonally
- 3/4 cup chicken or vegetable stock
- 2 tablespoons liquid honey
- 1/4 teaspoon ground nutmeg
- 1/4 cup sliced almonds
- 2 tablespoons butter
Stuffed Baked Potatoes

Scrub potatoes and bake 1 hour at 400 degrees
- 2 large Idaho potato
- 4 strips bacon, cut into quarters
- 1/2 cup chopped green onions
- 2 tablespoons grated parmesan cheese
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- butter

Easy Oat Bran Muffins

Preheat oven to 400, line muffin tin
- 1 1/4 C flour
- 1/2 C brown sugar
- 3/4 C oat bran
- 1/4 C sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 egg, slightly beaten
- 1 C milk
- 1/4 C vegetable oil
- 1/4 C honey
Breaded Parmesan Turkey Cutlets

In a shallow dish, combine bread crumbs,Parmesan cheese, thyme, tarragon salt and pepper
- 4 turkey cutlets
- 2/3 cup fine dry breadcrumbs
- 1/4 cup parmesan cheese
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried tarragon
- 1/4 teaspoon salt and pepper
- 1/4 cup low fat mayonnaise or yogurt
