Coffee Marinated Steak

In a skillet, toast sesame seeds in butter
- 2 T sesame seeds
- 6 T butter
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 C strong brewed coffee
- 1 C soy sauce
- 2 T white vinegar
- 2 T Worcestshire sauce
- 2 lbs boneless beef top sirloin steak (1" thick)
Cheesy Baked Chicken

Mix milk and mustard in a bowl
- to serve:
- 1 T skimmed milk
- 2 T prepared English mustard
- 1 C grated low-fat sharp Cheddar cheese
- 3 T flour
- 2 T chopped fresh chives
- 4 skinless, boneless chicken breasts
- jacket potatoes and fresh vegetables
- crisp salad
Sticky & Spicy Ribs

Combine all ingredients except the ribs in a medium saucepan
- 1 cup red wine vinegar
- 1 cup liquid honey
- 2 tablespoons worcestershire sauce
- 1/2 cup tomato sauce
- 1 teaspoon salt
- 1 teaspoon tabasco sauce
- 1 teaspoon paprika
- teaspoon coarse black pepper
- 3 cloves garlic, minced
- 1 1/2 tablespoons fresh ginger, minced
- 4 tablespoons green onion, minced
- 4 pounds pork ribs
Thai Turkey Burgers

Drain pineapple and cut into pieces that will fit in food processor
- Warm Pineapple Salsa:
- 1 fresh, ripe, cored pineapple
- 1 T sesame oil
- 1/4 tsp crushed red pepper flakes
- 1/2 small red bell pepper, seeded and chopped
- 1/4 red onion, finely chopped
- 2 T dark brown sugar
- 10 to 15 fresh basil leaves, cut into thin strips
- Burgers:
- 1 1/3 lbs ground turkey breast
- 1 inch fresh gingerroot, peeled and grated
- 2 cloves garlic, minced
- 2 T dark soy sauce
- 2 tsp curry powder
- coarse salt, to taste
- 2 scallions, finely chopped
- 4 cornmeal topped rolls
- red leaf lettuce for topping
Asparagus with Citrus Sauce

Break off the butt end and peel the top 3/4 of the asparagus
- SAUCE:
- 42 asparagus
- 2 cups salted water
- 2 cups ice water
- 3 tablespoons fresh orange juice
- 3/4 teaspoon orange zest
- 2 tablespoons fresh lime juice
- 3/4 teaspoon lime zest
- 2/3 cup extra virgin olive oil
- 1/2 cup heavy cream
- salt, to taste
- tabasco sauce, to taste
- 3 green onion, whole, minced, optional
Chili Roast Potatoes

Cook potatoes in a saucepan of boiling water for 10 minutes
- 1 pound small new potatoes, scrubbed
- 2/3 cup vegetable oil
- 1 teaspoon chili powder
- 1/2 teaspoon caraway seed
- 1 teaspoon salt
- 1 tablespoon chopped fresh basil
Sweet N Sour Pork

To prepare the batter, sift the flour, cornstarch baking powder and salt into a bowl
- 1 cup all-purpose flour
- 4 tablespoons cornstarch
- 1 1/2 teaspoons baking powder
- pinch salt
- 1 tablespoon oil
- water
- 8 ounces pork fillets, cut into 1/2" cubes
- 1 small can pineapple chunks, juice reserved
- oil for frying
- SWEET AND SOUR SAUCE
- 2 tablespoons cornstarch
- 1/2 cup light brown sugar
- pinch salt
- 1/2 cup cider vinegar
- 1 clove garlic , crushed
- 1 teaspoon fresh ginger, grated
- 6 tablespoons ketchup
- 6 tablespoons reserved pineapple juice
Zesty Chicken Cutlets Parmigiana

Cook pasta al dente. Drain
- Quick Marinara Sauce:
- Salt to taste
- 1 lb spaghetti
- 3 cloves garlic, minced
- 2 pinches crushed red pepper flakes
- 2 T olive oil
- 2 cans (28 oz each)crushed tomatoes
- 15 - 20 leaves fresh basil, roughly cut or torn
- 2 sprigs fresh oregano, leaves stripped and chopped
- handful chopped parsley
- Chicken:
- juice of 3 lemons
- 1/3 cup freshly grated Parmigiano
- 1 cup italian bread crumbs\freshly ground black pepper
- pinch crushed red pepper flakes
- handful parsley
- 1 1/2 lbs boneless skinless chicken breast cutlets
- 2 cloves garlic, popped from skin and left whole
- 3 T extra-virgin olive oil
- 1 lb fresh mozzarella, thinly sliced
