Apricot Sauce for Strudel or Ice Cream

In a saucepan, combine ingredients
- 1 C apricot nectar
- 1 C honey
- 1/4 C cognac or brandy
BBQ Spareribs with Apple-Sage Glaze

Place ribs in large pot and cover with water; bring to boil
- Glaze:
- 9 lbs pork spareribs
- 4 cloves garlic, minced
- 2 T minced fresh sage
- 1 T dry mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 500ml jar apple butter
- 1/2 C water
- 1/4 C cider vinegar
- 1 T each Dijon mustard and harseradish
- 1 T packed brown sugar
- 1/4 tsp cayenne pepper
Almond Jam Cookies

Beat butter, vanilla, sugar and yolks in medium bowl with electric mixer until just combined
- 185 grams butter, chopped
- 1 tsp vanilla
- 3/4 C sugar
- 2 egg yolks
- 1/2 C ground almonds
- 1 1/2 C flour
- 1/2 tsp baking powder
- 2 T apricot jam
- 1 tsp grated lemon rind
- 2 T raspberry jam
Wheat and Herb Scones

In a large bowl, mix flours, baking powder, herbs, until combined
- 1 1/2 C flour
- 1 1/2 C whole wheat flour
- 1 T baking powder
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 C unsalted butter, cut into 1/2" pieces
- 2 large eggs
- 1/2 C milk
Lemon Raspberry Muffins

Grease 6, 3/4 cup, muffin pan
- Lemon Glaze:
- 2 cups self raising flour
- 2 tsp grated lemon rind
- 1/3 cup caster sugar
- 1 egg, lightly beaten
- 60 g butter, melted
- 1 cup buttermilk
- 200 g frozen raspberries
- 1 T lemon juice
- 1 tsp gelatin
- 1 1/2 T caster sugar
Seafood Butter

Whip butter with beaters in small bowl until light in colour
- 1/2 C unsalted butter, softened
- 2 T chopped fresh parsley
- 1 T freshly squeezed lemon juice
- 1 T finely grated lemon peel
- 1/2 tsp salt
- freshly ground pepper, sprinkle
Waffles with Cherry Berry Sauce

Sauce: Bring fruit, sugar, water, and cornstarch bo a boil over medium-high
- Cherry Berry Sauce:
- 1 1/2 c flour
- 1 T sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 3 eggs, separated
- 1 1/2 C milk
- 1 tsp vanilla
- 2 T vegetable oil
- 1 1/2 C frozen sour cherries, thawed
- 1 C each frozen strawberries and raspberries, thawed
- 1/4 C frozen blueberries
- 1/4 C sugar
- 1/4 C water
- 2 T cornstarch
- 1 tsp vanilla
French Fries

Chill french cut potatoes in bowl of ice water 10 minutes minimum, preferably 1 - 2 hours

Asparagus with Lime

In large skillet, simmer asparagus in salted water for 6 minutes or just until tender
- 2 pounds asparagus, trimmed
- 2 tablespoons olive oil
- 1 tablespoon grated lime rind
- 2 tablespoons lime juice
- 2 teaspoons liquid honey
- 1/4 teaspoon salt
- pinch pepper
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh chives
- 2 tablespoons diced sweet red pepper
Thai Tenderloins

BBQ or roast in 350 oven for 35 - 40 minutes
- MARINADE:
- 2 pork tenderloin
- 1/3 cup chicken broth, divided
- 2 tablespoons lime juice
- 1 tablespoon sodium-reduced soy sauce
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 2 -inch strip lemon rind
- 1 teaspoon hot oriental chili paste
