My Favourite Carrot Bran Muffins
- 1 1/2 C flour (excellent with half whole wheat)
- 3/4 C brown sugar
- 3/4 C natural bran
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp slat
- 1 tsp cinnamon
- 2 eggs
- 1/2 C cooking oil
- 1 C grated carrot
- 1 C crushed pineapple juice
Mix first 7 ingredients in large bowl. Make well in center
In another bowl beat eggs until frothy. Add cooking oil, carrots, pineapple and juice. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full.
Bake in 400 oven for 20 - 25 minutes. Remove from pan after 5 minutes.
