Maritime Crab Dip

In bowl, beat together cream cheese with mayonnaise until smooth
- 125 grams cream cheese
- 1/4 cup mayonnaise
- 3 tablespoons chili sauce
- 1 teaspoon chopped fresh parsley
- 1/2 teaspoon pepper
- 1/2 teaspoon dijon mustard
- 2 cans crabmeat, drained
- 1 green onion, chopped
- 1/2 cup fresh bread crumbs
- 2 tablespoons butter, melted
Chicken Piccata

Saute onions and garlic in olive oil just until tender
- 1/4 small yellow onion
- 1 clove garlic, minced
- 2 small green onion
- 1 tablespoon olive oil
- 2 skinless boneless chicken breast halves
- 1/4 cup flour
- salt and pepper
- 1 tablespoon butter
- 2 tablespoons dry sherry
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons capers, chopped
- 2 tablespoons chicken stock, optional
- 4 thin lemon slices
- 2 tablespoons chopped parsley
Grilled Asparagus

Preheat lightly sprayed electric grill to medium-high
- 1 T olive oil
- 1 garlic clove, minced
- lemon pepper, sprinkle
- 1 lb fresh asparagus spears, trimmed
- 2 C boiling water
- long chives for tying
- 2 T prepared orange juice
Popovers

Beat eggs until frothy. Mix in milk and butter
- 2 eggs
- 1 C milk
- 3 T butter
- 1 C flour
- 1/2 tsp salt
Creole Seasoning

- 2 1/2 cups sugar

Chicken Pieces with Lime

Bran Scones

- 1 3/4 C all-purpose flour
- 1/2 C natural bran or all-bran cereal
- 1/4 C sugar
- 1 T baking powder
- 1 tsp salt

- 1 egg
- 3/4 C milk
Rosemary Veal Cutlets

- 2 bacon rashers
- 4 veal cutlets
- flour
- 1 egg, slightly beaten
- 1 T milk
- 1 1/2 C stale breadcrumbs
- 1 T chopped fresh rosemary

- 4 slices swiss cheese
Montana Panini

- 12 slices sourdough break, 1/2-inch thick
- 3 tablespoons butter, softened
- 3/4 pound thinly sliced cooked deli turkey
- 12 slices turkey bacon, crisply cooked, broken in half
- 1 large tomato, sliced
- 6 slices Colby Monterey Jack cheese
