Ingredients

  • 1 1/4 cups boiling water
  • 1 cup oats
  • 1 1/4 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup butter
  • 1 1/2 cups packed brown sugar
  • 2 eggs
  • 3/4 cup finely chopped dried apricots
  • TOPPING
  • 3 tablespoons butter
  • 1/2 cup packed brown sugar
  • 3 tablespoons light cream
  • 1 cup flaked coconut
  • 1/2 cup nuts

Step 1

Pour boiling water over oats. Stir and set aside. combine next 5 ingredients. Cream butter, brown sugar and eggs together until light. Stir in oats, flour mixture and apricots. Blend thoroughly. Spread batter into lightly sprayed 9-inch square pan.

Bake at 350 for 35 - 40 minutes.

Prepare topping while cake is baking. Melt butter in small saucepan. Stir in remaining ingredients. Spread evenly on warm cake. Broil 6-inches below element for 3 - 5 minutes.
