Preheat oven to 350 deg. Spray 13x9" baking dish with nonstick cooking spray
- 12 lg manicotti shells
- 4 cups shredded mozzarella cheese, divided
- 2 cups ricotta cheese
- 6 Tbsp chopped fresh basil or 2 Tbsp dried basil
- 1 - 26oz jar prepared spaghetti sauce, divided
- 1/2 cup grated Parmesan or Romano cheese
Slow Roasted Salmon with Potatoes

Preheat the oven to 450 degrees F
- 3 bunches leeks, trimmed and quartered lengthwise
- 1/3 cup plus 1 Tbsp extra-virgin olive oil
- Sea salt
- 3 lbs fresh, skin-on, center-cut wild salmon fillet, pin bones removed
- 1 1/2 lbs fingerling potatoes
- 1 shallot
- 4 Tbsp unsalted butter, at room temperature

- 2 Tbsp fresh parsley
- Juice of 1/2 lemon
Chicken Baked in Coconut-Curry Sauce

Preheat oven to 425 deg. Combine first 4 ingredients in a medium bowl; stir with a whisk
- 1/2 cup coconut milk
- 1/4 cup fat-free, less-sodium chicken broth
- 2 tsp minced garlic
- 1 to 1-1/2 tsp red curry paste
- 4 6oz skinless, boneless chicken breast halves
- 3/4 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 2 med zucchini, halved lengthwise and thinly sliced (about 2 cups)
- 1 cup thinly sliced yellow squash (about 2 small)
- 1 cup 1/4" thick red bell pepper strips (about 1 lg)
- 1/2 cup diagonally cut green onions
- 4 tsp chopped fresh cilantro
- 4 lime wedges

Hot and Sour Soup

In a large saucepan, heat oil over medium heat
- 1 Tbsp vegetable oil
- 2 cloves garlic, minced
- 6 cups reduced-sodium beef broth
- 1 Tbsp reduced-sodium soy sauce
- 1 cup canned straw mushrooms, drained
- 1 cup canned sliced bamboo shoots, drained
- 1 cup chopped tofu (optional)
- 3 Tbsp cornstarch
- 3 Tbsp cold water
- 3 egg whites, lightly beaten

Sweet Potato Black Bean Hash

- 3 cups diced sweet potatoes (about 2 large potatoes)
- 1/2 yellow onion, diced
- 1 red pepper, sliced
- Salt and pepper to taste
- 1/2 Tbsp. Paprika
- 1 tsp Cumin
- 2 cups spinach
- 1 15 oz. can black beans
