Laurie's Stuffed Manicotti

Heat oven to 350 deg. In large saucepan, brown sausage; drain
- 1 lb mild bulk pork sausage
- 2 - 15 oz cans Italian tomato sauce
- 1 - 6 oz can tomato paste
- 1/4 cup water
- 1/2 Tbsp packed lt brown sugar
- 1 - 15 oz carton ricotta cheese
- 3 cups shredded mozzerella cheese
- 1 egg
- 1 tsp parsley flakes
- 12 manicotti noodles, cooked, rinsed & drained
- grated Parmesan cheese
White Sangria

Fill a large pitcher half way with some ice
- 1 Bottle Pinot Grigio, or other dry fruity white wine
- 1/4 cup white rum
- 24 oz lemon lime soda
- 1 lime, thinly sliced into disks about 1/4" thick
- 1 lemon, thinly sliced into disks about 1/4" thick
- Optional garnishes
- 1 pint fresh cherries (Bing are best)
- 1 pint fresh strawberries if small left whole if large cut into quarters

Broccoli Salad with Creamy Feta Dressing

Whisk feta, yogurt, lemon juice, garlic and pepper in a medium bowl until combined
- 1/3 cup crumbled feta cheese
- 1/4 cup nonfat plain yogurt
- 1 Tbsp lemon juice
- 1 clove garlic , minced
- 1/4 tsp freshly ground pepper
- 8 oz broccoli crowns , trimmed and finely chopped (about 3 cups)
- 1 7oz can chickpeas , rinsed
- 1/2 cup chopped red bell pepper
Roasted Garlic Lamb with Rosemary Potatoes

- 2 heads garlic, halved
- 3 Tbsp olive oil
- 1 Australian leg of lamb, boneless
- Salt & freshly ground pepper to taste
- 2 Tbsp rosemary, chopped
- 3 lbs small red potatoes, halved
- Grilled or roasted asparagus or preferred vegetable
Classic Margarita

- Lime wedges
- 1-1/2 oz favorite tequila
- 1/2 oz Triple Sec
- 1 oz fresh lime juice
