Chicken with White Wine Caper Sauce

Trim all visible fat off the chicken breast halves and sprinkle with pepper
- 2 boneless, skinless chicken breast halves
- Freshly ground black pepper
- 1-1/2 tsp olive oil
- 2 Tbsp finely chopped shallots
- 1/3 cup dry white wine
- 3/4 cup low-sodium, no-fat chicken broth
- 2 tsp drained capers
- 1/4 cup heavy cream
- 1-1/2 cups cooked long grain white rice
Portobello Pork Chops

Heat oven to 375 deg. Trim fat from chops
- 4 pork rib or loin chops, 3/4" thick
- 1-1/2 cups mild chunky salsa
- 1 cup Portobello mushrooms, chopped
- 1 cup shredded cheddar cheese
- 2 Tbsp maple syrup
- 1/4 cup fresh parsley, snipped
Grilled Pork Tenderloin with Fresh Cherry Relish

- ¼ cup Vegetable Oil or Canola Oil, plus extra oil for brushing grate
- 4 large cloves Garlic, thinly sliced crosswise
- ½ teaspoon Ground Cumin
- ¼ cup Fresh Lime Juice
- ¼ cup Fresh Orange Juice
- 1 teaspoon Coarse Salt, such as Kosher
- ½ teaspoon Freshly Ground Black Pepper
- ¼ cup Water
- 2 (10 ounce) Pork Tenderloins, sinew trimmed if present (see Meatless Tip)
- Relish
- 1 tablespoon Vegetable Oil or Canola Oil
- 1 medium Yellow Onion, coarsely chopped
- 2 teaspoon Orange Zest (colored portion of peel), minced
- 2 cups Cherries, pitted
- ¼ teaspoon Ground Cayenne Pepper
- 1 teaspoon Fresh Rosemary Leaves, minced
- ½ cup Cherry Preserves
- 2 tablespoons Balsamic Vinegar
- ¼ teaspoon Ground Cloves
- Salt
Baked Garlic Parmesan Fries

Preheat oven to 450 degrees Fahrenheit
- – 3 to 4 large russet potatoes, cut into wedges
- – 3 tablespoons olive oil
- – 2 teaspoons salt
- – 3 teaspoons garlic powder

- 2 Tbsp butter, cut into tiny pieces
Down-home Cheesy Bacon Chicken

- 2 slices bacon, chopped
- 4 small boneless skinless chicken breast halves (1 lb)
- 1/4 lb (4 oz) Velveeta Pasteurized Prepared Cheese product, cut into 1/2" cubes
- 2 Tbsp chicken broth
Spinach Dip Guilt-Free

Combine all ingredients and chill about 2 hours
- 1 packet Knorrs Vegetable Recipe Mix
- 1/4 cup reduced fat mayo
- 10 ounces frozen spinach, thawed and drained
- 22 ounces Fage total 0% yogurt (or 2 cups+ 3/4 cup)
- Chives to garnish (optional)
