- 1 1 1 pound (500 g) fingerling potatoes, halved (or Yukon golds or halved white/red baby potatoes)
- 2 2 2 tablespoons olive oil
- 1 1/2 1 1/2 1/2 teaspoons salt, divided
- 1/2 1/2 1/2 teaspoon cracked black pepper, divided
- 4 4 170 4 (6 oz | 170 g) skinless salmon fillets
- 2 1/2 2 1/2 1/2 tablespoons minced garlic, divided
- 2 2 2 tablespoons fresh chopped parsley
- 1/3 1/3 1/3 cup freshly squeezed lemon juice
- 1/2 1/2 1/2 cup melted unsalted butter
- 3 3 3 bunches asparagus, (18 spears, woody ends removed)
- 2 2 1/4 tablespoons dry white wine (substitute with 1/4 cup low-sodium chicken broth)
- 1 1 to lemon sliced to garnish

Chimichurri Chicken

Mix all ingredients together in a bowl
- Chimichurri:
- 1/2 1/2 1/2 cup olive oil
- 2 2 2 tablespoons red wine vinegar
- 1/2 1/2 1/2 cup finely chopped parsley
- 4 4 4 cloves garlic finely chopped or minced
- 2 2 1 1 red chilies or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili)
- 3/4 3/4 3/4 teaspoon dried oregano
- 1/2 1 1/2 1 to - 1 level teaspoon coarse salt (adjust to your tastes)
- 1/2 1/2 to teaspoon pepper (adjust to your tastes)
- Chicken:
- 4 4 4 skinless boneless chicken thighs (or breasts)

Start by preheating your oven to 350 degrees Fahrenheit
- 1 c all purpose flour
- 4 tsp paprika
- 3 tsp salt
- 1/2 tsp black pepper

- 4-6 boneless pork chops
