Chicken and Roasted Garlic Lasagna

For Chicken: Prepare the roasted garlic
- Chicken Mixture:
- 2 cups roasted chicken, shredded
- 2 bulbs of roasted garlic
- 1/4 sweet yellow onion, diced finely
- 5-6 baby bell peppers, diced finely (I used red & yellow)
- 6-7 fresh basil leaves, chopped
- Dried oregano, to taste
- Sea salt and freshly cracked pepper, to taste
- Other Ingredients:
- 1 (32 ounce) container ricotta cheese (I used part skim fat)
- 1 egg
- 5-6 fresh basil leaves, chopped
- Dried Oregano, to taste
- Fresh nutmeg, grated, to taste
- 1/2 cup + 3 tbsp of Parmesan cheese (divided)
- 9 whole wheat lasagna noodles, cooked per instructions
- Mozzarella cheese, shredded
- Roasted Garlic and Basil Marinara
Penne with Shrimp and Herbed Cream Sauce

Bring a large pot of salted water to a boil over high heat
- 1 pound penne pasta
- 1/4 cup olive oil
- 1 pound medium shrimp, peeled, and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon kosher salt, plus extra for seasoning
- 1/2 teaspoon freshly ground black pepper, plus extra for seasoning
- 1 (15-ounce) can whole tomatoes, drained, roughly chopped
- 1/2 cup chopped fresh basil leaves
- 1/2 cup chopped fresh flat-leaf parsley
- 1/4 teaspoon crushed red pepper flakes
- 1 cup white wine
- 1/3 cup clam juice
- 3/4 cup heavy whipping cream
- 1/2 cup grated Parmesan
Chocolate and Maraschino Cherry Shortbread Cookies

Cherry shortbread cookies are dipped in melted white or dark chocolate
- 1 cup unsalted butter, room temperature, 2sticks
- 1/2 cup confectioners sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup maraschino cherries, chopped
- 1/2 cup white and/or dark chocolate chips
- 1/2 tablespoon vanilla extract
- 8 ounces white and/or dark chocolate, chopped (optional)
brownie - Fudgy Peanut Butter Chocolate Chip Brownies {flourless, gluten free, vegan}

Preheat oven to 350 degrees F
- 1/2 cup all natural peanut butter
- 1/4 cup honey (agave or maple syrup if vegan)
- 1 teaspoon vanilla
- 1/2 cup all natural unsweetened applesauce
- 1/2 cup unsweetened cocoa powder (I use Trader Joe’s)
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt, if desired
- 1/4 cup mini chocolate chips, plus 2 tablespoons for sprinkling on top (I use the Enjoy Life brand to make them vegan)

- 1 medium-sized pineapple
- 1 cup (8 ounces) water
- 1 cup (7 ounces) plus 2 tablespoons sugar, divided
- 1 1/2 cups (3 sticks) unsalted butter
- 2 large egg yolks
- 1 1/4 cups (6 1/4 ounces) all-purpose flour
- 1/4 cup (1 1/2 ounces) cornstarch
- 1/4 teaspoon baking powder
