Preheat oven to 350. Line a loaf pan with prchment paper and grease well
- 1 cup plus 2 T soymilk, heated to steaming and kept warm
- 1/4 cup finely ground espresso
- 2 T instant coffee
- 2 cups all purpose flour
- 4 T soy flour
- 2 tsp baking power
- 2 tsp ground cinnamon
- 1/4 cup fine sea salt
- 1 1/2 cups granulated sugar
- 1 cup canola oil
- 1 T pure vanilla extract
- 3/4 cups semi sweet chocolate chips
Yukon Gold Potato Soup with Roasted Garlic and Red Peppers

Preheat oven to 350 degrees
- 1 large whole heads garlic
- 1 T canola oil
- 1 cup finely chopped onion
- 6-7 medium Yukon Gold potatoes, peeled and diced
- 1 cup peeled, diced apple like Cortland
- 1/4 cup dry white wine
- 3-4 scallions, thinly sliced
- 1/2 cup reduced fat sour cream
- 1/2 to 1 cup low fat milk, as needed
- salt and pepper
Oatmeal Cranberry White Chocolate Chunk Cookies

Preheat oven to 375 degress
- 2/3 cup butter softened
- 2/3 cup brown sugar
- 2 large eggs
- 1 1/2 cups old fashioned oats
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 6oz pkg craisins cranberries
- 2/3 cup white chocolate chunks or chips

- 2 1/2 Cups shredded sweet coconut
- 1/4 cup confectioners sugar
- 2 1/2 Tablespoons unsalted butter, chilled & thinly sliced.

1. Thinly slice tomatoes. Place on paper towel to drain for about 30 minutes
