- 1 3/4 cups flour
- 1/2 cup plus 2 T whole milk
- 3 large eggs, separated
- 1-5oz bag soft caramels
- 1/4 cups confectioners sugar
King Ranch Chicken Casserole

- 1 large onion chopped
- 1 green pepper chopped
- 2 T. vegetable oil
- 2 Cups chopped cooked chicken
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can diced tomato and green chilis
- 1 tsp. chili powder
- 1/4 tsp. pepper
- 12 --6 in. corn tortillas

Italian Chicken and Escarole Soup

Heat oil over medium heat
- 2 T. olive oil
- 4 cloves minced garlic
- 4 cups chicken broth
- 1-14 1/2 oz can Italian style tomatoes undrained
- 1 bunch escarole, rinsed and chopped
- 1 lb. chicken breasts cut in 1 inch chunks
- 1/2 cup tiny pasta such as stars
- 1/4 tsp pepper
- 1/2 cup grated Parmesan
