Crockpot Pot Roast Dinner

Trim fat from roast. If necessary cut to fit into crock pot
- 3 lb beef chuck pot roast
- 1 T cooking oil
- 1 1/2 cups tomato juice
- 1/4 cup wine vinegar
- 2 tsp Worchestershire sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 1 clove garlic minced
- 6 carrots cut into 1/2" pieces
- 6 boiling onions
- 1/4 cup quick cooking tapioca
- mashed potatoes
Rump Roast and Vegetables Crockpot

In large skillet brown roast on all sides in hot oil
- 2 lbs boneless beef round rump, round tip or chuck pot roast.
- 2 T cooking oil
- 1 1/2 lb small potatoes halved but not unpeeled
- 3 medium carrots cut into 1/2 inch strips
- 1 small onion sliced
- 1 bay leaf
- 2 T quick cooking tapioca
- 1-10 oz can condensed vegetable beef soup
- 1/4 cup water
- 1/4 tsp pepper
Oriental Mushroom Broth

Heat oil in large heavy saucepan
- 2 tsp sesame oil
- 1 small onion, minced
- 1 clove garlic, minced
- 6 cups water
- 8-10 dried shiitake mushrooms
- 1-2 T soy sauce or tamari
Pasta with Squash, Brown Butter and Rosemary

3 lb butternut squash--peeled, seeded, and cut into 1/2 inch cubes 1 onion, chopped 2 1/2 T
- Preheat oven to 400 degrees. In a large bowl, toss squash, onion, evoo, and rosemary. seson with salt and pepper. Place on baking sheet and roast until squash is tender, about 30 minutes.
- Meanwhile, in a large pot of boiling water, cook pasta, drain and transfer to a large bowl.
- In a small skillet, melt the butter over medium heat and cook, stir occasionally, until golden, about 7 minutes. Stir in lemon juice.
- Add roasted squash, brown butter and 1/3 cup parmesan cheese. Season with salt and pepper and top with pine nuts and parmesean cheese.
Goat Cheese and Tomato Bruchetta

Mix together 2 T. olive oil 1/2 lb
- 2 T. olive oil
- 1/2 lb. goat cheese
- 1/2 lb. cream cheese
- 1 clove garlic crushed
- 2 T. olive oil
- 1/2 medium onion diced
- 1 -16 oz. can tomato in juice
- 1 fresh tomato chopped
- basil
Speedy Tortellini in Broth

Simmer 1 pkg tortellini in 6 cups chicken broth until cooked
- 1 pkg cheese tortellini
- 6 cups chicken broth
- 5 sun dried tomatoes chopped
- 1 cup frozen peas
- Grated Parmesan cheese

- 1 tsp. olive oil
- 1 tsp. paprika
- 1 tsp. rosemary
- 1/2 tsp. garlic salt

- 1/2 lb. angel hair pasta
- 3 T. hoisin sauce
- 1/4 cup chicken broth
- 2 T. soy sauce
- 2 tsp. sesame oil
- 1 tsp. corn starch
- 2 T. vegetable oil
- 1 T. finely chopped ginger
- 1 medium onion cut in thin slices
- 5 shitakke mushroom caps thinly sliced
- 1/2 cup thin sliced carrots
- 1 cup broccoli
- 1 cup sugar snap peas
- 1 can Chinese corn
- 1 lb. chicken breast cut in strips
