Garlic Butter Croutons

Position a rack in the center of the oven and heat the oven to 350°F
- 4 large slices white sandwich bread, cut into 3/4- to 1-inch pieces (about 4 cups)
- 3 oz. (6 Tbs.) unsalted butter
- 2 large cloves garlic, smashed and peeled
- Kosher salt
Nine Layer Taco Dip

Top with 1 pkg. shredded mild cheddar cheese and one pkg
- 1 can El Paso refried beans - spread on bottom of flat dish
- 1 taco seasoning mix - sprinkle 1/2 pkg. on beans
- (Blend together)
- 4 avocados - mashed
- 2 tsp. lemon juice
- salt and pepper to taste
- 1/2 cup sour cream
- Spread
- (Blend together)
- 1 pint sour cream
- 1 cup mayo
- Add remainder of taco seasoning mix
- Fresh or powered garlic to taste
- Spread
- Chopped peppers (green or red or yellow) or chilies
- 1 can chopped black olives
- 2 fresh tomatoes (chopped)
- Scallions (chopped) lots of them
Pig Pickin' Cake

Mix pineapple and pudding and chill
- Divide in half:
- 1 yellow extra moist cake mix
- 4 eggs
- 1/2 cup oil
- 11 oz. can mandarin oranges
- Mix and bake in 3 layers or 2 layers.
- 9 oz. pkg Cool Whip
- 1 lg. can crushed pineapple (drained)
- 1 pkg. instant mix vanilla pudding
Shrimp Creole

Cook onion, celery, garlic in hot oil until tender, but not brown
- 1/2 cup chopped onion
- 1 tsp. salt
- 1/2 cup chopped celery
- 1 tsp. sugar
- 1 clove garlic, minced
- 1/2 to 1 tsp. chili powder
- 3 Tbsp. salad oil
- 1 Tbsp. Worcestershire sauce
- 1 can (2cups) tomatoes
- dash Tabasco
- 1 8 oz. can seasoned tomato sauce
- 1 tsp. cornstarch
- 12 oz. raw shrimp
- 1/2 cup green pepper
Parmesan Cheese Crisps

- 6 Tbsp. freshly grated Parmesan cheese
- Cooking spray

Potato Gratin

- 1 garlic clove, peeled and halved
- 1 tablespoon unsalted butter, softened
- 2 1/2 cups whole milk
- 2 tablespoons minced shallots
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Dash of grated whole nutmeg
- 2 pounds Yukon gold potatoes, peeled and cut into 1/8-inch-thick slices
- 1/2 cup (2 ounces) shredded Gruyère cheese
- 1/4 cup (1 ounce) grated fresh Parmigiano-Reggiano cheese

Mix first 4 ingredients. Bring to boil over moderate heat stirring frequently

- 4-1/2 oz. (1 cup) unbleached all-purpose flour
- 1 cup yellow cornmeal, preferably stone-ground
- 2 tsp. baking powder
- 1 tsp. table salt
- 1-1/4 cups low-fat milk
- 2 Tbs. honey
- 1 large egg
- 1/3 cup corn oil
- 8 scallions (white and light green parts only), trimmed and thinly sliced
- Freshly ground black pepper
- 3 thick slices bacon
Beef Burgundy

- 2 Tbsp. shortening
- 1 large onion, sliced
- 1/2 pound mushrooms, sliced or whole
- 2 pounds top or bottom round steak, sliced into thin strips
- 1 tsp. salt
- 1/4 tsp. marjoram
- 1/4 tsp. thyme
- 1/8 tsp. pepper
- 1 1/2 Tbsp. flour
- 3/4 cup beef broth
- 1 1/2 cups red burgundy cooking wine

In a large skillet, saute mushrooms in butter until tender
- 6 cups sliced fresh mushrooms
- 1 tablespoon butter
- 4 green onions, chopped
- 1 loaf (1 pound) French bread
- 1 carton (8 ounces) spreadable garlic and herb cream cheese
- 2 cups (8 ounces) shredded Italian cheese blend
- 1 cup mayonnaise
- 1 cup grated Parmesan cheese
