Chicken Pot Pie

In a large pot, bring broth, veggies and chicken to a boil
- 2 boxes chicken broth
- 1 small bag frozen, diced carrots with peas
- 2 medium potatoes, diced
- 3 chicken breasts, boiled and cubed or shredded
- 1 tsp. black pepper
- 1/2 tsp. salt
- 1/2 tsp. poultry seasoning
- flour and broth mixture for thickening agent
- 1 ready made pie crust
Rattlesnake Bites

In large bowl, combine cheese, peppers, milk, and breadcrumbs
- 2 c. shredded Monterrey Jack cheese
- 4-5 jalapeños, chopped (can use green or red bell peppers to reduce spiciness)
- 2 - 4 Tbs. milk or half & half or cream
- 1/2 c. breadcrumbs
- crushed red pepper to taste
- salt & pepper
- cornmeal, buttermilk for coating
Reuben Spread

In a 3-qt. slow cooker, combine the first five ingredients
- 2-1/2 cups cubed cooked corned beef
- 1 jar (16 ounces) sauerkraut, rinsed and well drained
- 2 cups (8 ounces) shredded Swiss cheese
- 2 cups (8 ounces) shredded cheddar cheese
- 1 cup mayonnaise
- Snack rye bread
Sugar and Spice Bacon

- 3 tablespoons reduced-sodium soy sauce, divided
- 1 tablespoon sherry
- 1/4 teaspoon minced fresh gingerroot or dash ground ginger
- 1/2 pound beef flank steak, cut into thin strips
- 1 teaspoon cornstarch
- 1/2 cup beef broth
- 1-1/2 teaspoons hoisin sauce
- 1/8 teaspoon sugar
- 2 tablespoons canola oil, divided
- 2 pounds fresh asparagus, trimmed and cut into 1-inch pieces
- 1 garlic clove, minced
- 3 cups hot cooked rice
Hot and Sour Soup with Tofu

Preparation 1. Place tofu on several layers of paper towels
- 1 (14-ounce) package firm water-packed tofu, drained
- 1 3/4 cups water, divided
- 1 (1/2-ounce) package dried sliced shiitake mushroom caps
- 4 cups fat-free, less-sodium chicken broth
- 1/4 cup white vinegar
- 2 tablespoons less-sodium soy sauce
- 1 tablespoon finely chopped peeled fresh ginger
- 2 teaspoons sugar
- 3/4 teaspoon white pepper
- 1 garlic clove, minced
- 2 1/2 tablespoons cornstarch
- 1/2 cup canned sliced bamboo shoots, drained and cut into julienne strips
- 1 large egg, lightly beaten

- 1/4 teaspoon kosher salt
- 1/8 teaspoon crushed red pepper
- 8 ounces shiitake mushrooms, stemmed and chopped
- 8 ounces button mushrooms, chopped
- 2 green onions, cut into 2-inch pieces
- 2 garlic cloves
- Cooking spray
- 6 ounces chopped fresh spinach
- 28 gyoza skins
- 2 teaspoons peanut oil, divided
- 1/2 cup organic vegetable broth, divided
- 1/3 cup fresh orange juice

Pizza Lover's Pie

In a large skillet, cook the sausage, pepper and onion over medium heat until meat is no longer pink; drain
- 1/4 pound bulk pork sausage
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 1 loaf (1 pound) frozen bread dough, thawed and halved
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 can (8 ounces) pizza sauce

- 1 can (4 ounces) mushroom stems and pieces, drained
- 1/4 teaspoon dried oregano
Toasted Bread with Chocolate

- 8 1/2 -inch-thick slices good bread, such as a rustic peasant bread or a real baguette
- Best-quality extra-virgin olive oil for drizzling
