Mushroom Cheese Bread

In a large skillet, saute mushrooms in butter until tender
- 6 cups sliced fresh mushrooms
- 1 tablespoon butter
- 4 green onions, chopped
- 1 loaf (1 pound) French bread
- 1 carton (8 ounces) spreadable garlic and herb cream cheese
- 2 cups (8 ounces) shredded Italian cheese blend
- 1 cup mayonnaise
- 1 cup grated Parmesan cheese
Spicy Potato Soup

In a Dutch oven or large kettle, brown ground beef over medium heat until no longer pink; drain
- 1 pound ground beef
- 4 cups cubed peeled potatoes (1/2-in cubes)
- 1 small onion, chopped
- 3 cans (8 ounces each) tomato sauce
- 4 cups water
- 2 teaspoons salt
- 1-1/2 teaspoons pepper
- 1/2 to 1 teaspoon hot pepper sauce
Sausage and Sauerkraut

In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned
- 4 medium potatoes, peeled and cubed
- 2 tablespoons canola oil
- 1 small onion, halved and sliced
- 1 pound smoked sausage, cut into 1/4-inch pieces
- 1 package (16 ounces) sauerkraut, rinsed and well drained
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
Rigatoni with Bacon and Asparagus

- 1 package (16 ounces) spiral pasta
- 1 pound fresh asparagus, trimmed and coarsely chopped
- 8 bacon strips
- 1 garlic clove, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2/3 cup half-and-half cream
- 1/2 cup shredded part-skim mozzarella cheese
- 1/2 teaspoon salt
- 1/4 cup minced fresh parsley
- 1/8 teaspoon coarsely ground pepper
- 1/4 cup grated Parmigiano-Reggiano cheese
Mozzarella and Prosciutto Panini

Whisk the olive oil, vinegar, oregano, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl to blend
- 1/4 cup extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons minced fresh oregano, or 1 teaspoon dried
- 1 teaspoon minced garlic
- Kosher salt and freshly ground pepper
- 8 1/2 -inch-thick slices ciabatta or other rustic Italian white bread
- 4 ounces thinly sliced mozzarella cheese
- 4 ounces thinly sliced prosciutto
- 6 ounces jarred roasted red peppers,drained and torn into 1-inch-wide pieces
BBQ Pork Roast

Combine all ingredients and pour over pork roast in a shallow roasting pan
- 4 pounds pork roast
- 1 lemon, peeled and thinly sliced
- 1 onion, thinly sliced

- 1 cup ketchup
- 1/3 cup Worcestershire sauce
- 1 tsp. chili powder
- 1 tsp. salt
- Dash hot sauce

- 2 small sweet onions, chopped
- 1-1/2 cups mayonnaise
- 1-1/2 cups (6 ounces) shredded Swiss cheese

Burgers Smothered in Onions, Mushrooms and Blue Cheese Sauce

- 1 1/2 pound ground beef
- salt and pepper to taste
- 4 buns
- 1/2 cup caramelized onion, mushroom and blue cheese sauce (see below)
- 4 leaves lettuce
- 4 slices tomato
- 2 tablespoons butter
- 1 onion, sliced
- 2 cloves garlic, chopped
- 1 teaspoon thyme, chopped
- 8 ounces mushrooms, sliced
- salt and pepper to taste
- 1 splash brandy
- 1/4 cup beef broth
- 1/2 cup blue cheese, crumbled
Baked Eggs with Cheddar and Bacon

Potato Chip Tortilla
